Nice. Very non-conventional methods. I never thought of using shape builder and gaussian blurred strokes as gradients this way

how did he setup the variant stroke width profiles at 0:34 so he can just use eye dropper tool to copy the stroke width

I made few paths with pen tool one by one. Then I applied different stroke profiles to them from "Stroke Panel". You can create variable width using "Width Tool". Just Apply to those sample strokes & use Picker tool during whole process. It is easier than selecting from stroke panel again and again. I hope this is the answer. Good Luck.

@@vectorslategraphicdesigntu8991 How can you select a variable width profile (before creating ellipse) and then create ellipse (or pen Stroke) and that variable width gets applied to the ellipse . I selected a Variable Width Profile and then created an ellipse but the stroke on ellipse was uniform and not the variable profile width i selected . Would be great if you can help me.

When i try to pick the attributes of a stroke and then apply it on my stroke , it only changes the width and makes it uniform instead of having a variable width like you . Thanks in advance
