I've watched so many pasta-making videos, and even though they are basically all an extremely similar "recipe," none of them have been as EXCELLENT as this one. This guy is so funny and so wonderful! What a contagious joy!

I have to admit, I cried watching this video! It brought some very old memories of my late grandma. She was Sicilian and very proud of her heritage. Sunday used to be “Family Day” and she would have the whole family for lunch. She used to have a wooden board to put over the table just for mixing the dough, a massive, thick, heavy rolling pin (about 4’ long!!!) and an old wooden broom stick to dry the pasta! Watching her working was a thing of beauty! I remember the countless times that she tried to teach me how to make the dough and I’d lose count on daily basis on how many times she would slap my hand telling I’m being to hasty or careless with the dough. One particular part of the video that struck a chord with me was when Giuseppe mentioned about the flour well with the eggs in the middle and slowly adding the flour from the pile. That’s exactly how she used to do it… *sigh* Thank you! Thank you so much for this experience and trip down memory lane!

This man is very captivating, his speech is not mundane or repetitive and it keeps your mind wanting more. I have to say, one of the easiest teachers I have had the privilege to watch and listen to! You only mentioned "get a good one (pasta machine)"... Would you care to tell us which one/s you have? Thank you, wish I was still living in Germany.. I would take a week and visit.

Do you use the coarse semolina or the fine (Semola)? Also, if I make a larger amount, do I increase the Extra Virgin Olive Oil?

I bought the set of 5 pasta maker for my kitchenaid mixer. It was knew to me pasta size is match with a dish and a sauce. Love your class. your happiness is contagious. Do you use 00 fresh flour or you used older flour? Thanks

0:45 it would be great to learn which sauce demands which type of pasta recipe (e.g., does shrimp scampi go with an egg pasta? If so, should it have semolina?) Also, how many servings is this recipe? Trying to figure out how to scale it up/down.

Imperia Titania I think. Good machine. Another Italian classic, or should I say *the* Italian classic, is the Marcato Atlas 150 ‘Made in Italy’. You will not go wrong with one of those 🍝 🇮🇹

This was in part a very useful tutorial and in part very confusing because Giuseppe's instruction that 6 is the widest pass through on the Atlas 150 does not match my new (2024) machine. On mine, the lower numbers produce thicker sheets and the higher numbers increasingly thinner. Maybe Atlas has reconfigured the dial in recent years? The other confusion for me was that Giuseppe suggested 350 g semolina and 150 g 00 flour (plus eggs plus EVOO). For me, this created attractive fettuccine that cooked up well, but that lacked chewiness. This was my first attempt at pasta making so maybe it was me; however, I researched more afterwards and found most other recipes suggest opposite proportions of semolina to 00. I will try next time with 350 g 00 flour and 150 g semolina and see if that comes out both attractive and with proper texture. Giuseppe is really fun to watch tand his humor, his instructions on kneading and mixing, and his advice about not stressing over pasta making were truly helpful to me as a first-timer!

I do everything as you say, the pasta comes out great. I’ve done every pasta that I can with it. I have a problem though. My favorite is spaghetti but my dough will not get caught by the spaghetti attachment. I try and try and can’t get it to cut into spaghetti. I tried wetting the tip of the dough, adding more flour to the tips, adding flour to the teeth of the attachment and nothing. I even tried making the dough thinner. The spaghetti attachment just won’t catch the dough.
