This is a Imu or ground oven. An Imu was used to cook things like pig. Today Polynesian communities around the world have introduced this type of cooking. The culture celebration and memorial of Iosepa in Utah is held each memorial day. This celebration attracts many hawaiian members in the state and some from Hawaii. This imu was used to cook a feast for the participants.
This video shows some of the process that goes into cooking a pig. The Hawaiian pioneers that came to this area in the late 1800's used Water crest from a local pond. In this video the water crest was harvested from the same location their predecessors used.
