I’ve heard a few chefs say never to add oil to food processors because everything emulsifies and the texture of the food isn’t how it should be. They always recommend adding a little bit of water, or the water you used to soak the red chillies in. Why waste that flavour 😄 can’t wait to try this!

Great dish I am using halal goat chunks, same deal but I this with my twist - a cinnamon stick 7-8 whole cloves, teaspoon of saffron threads, two tablespoons of honey, some bay leaf I like the lemon raisin almond sliver basmati rice (long grain) cooked with chicken stock

The recipe I use is pretty much identical to yours, I used a slow cooker and last time the meat was short ribs. It was insanely good, Rendang is defo the best dish on the planet...

Could you sub out the meat for tofu if you were going for a vegetarian/ vegan version?

I would not recommend tofu. Since it has to cook for some time, there would be no tofu left. Try tempeh instead. In Indonesia we also use young jackfruit.

@@Putrimalu1806 thanks. I mean if you're not using beef it really wouldn't be necessary to slow cook it for that amount of time because it wouldn't need to break down and much easier for the flavours to penetrate. Young jackfruit sounds good - the texture would work well.

But you still need to cook it for some time, so the gravy get the right consistency. The flavor will be different too. But i guess you can add tofu at the end of the cooking process.

This is not rendang...hasn't been cooked for long enough. It's a Malaysian brown curry...the stage before rendang. Will still be tasty though.
