For all people talking about hygiene... Many people here are poor and I'd probably get the food he made for less than Rs. 40 which is less than a dollar. If you want fancy food, go to a 5 star restaurant and help yourself. A street food vendor in a developing country cannot afford to maintain the kind of hygiene that y'all expect.

It's probably about rupees 10 or 12 not rupees 40.. Also doesn't every thing gets cooked on the hot stove. And he doesn't touch the omelet after it is cooked. If you go to a sit down or 5 star restaurant the food preparation is pretty much the same. The difference is you don't see it. You only see the presentation on a fancy plate.

While everyone likes to harp on the hygiene, in terms of street food this seems pretty safe to eat. Everything is fully cooked and there's no chutney's on top that have been sitting around all day. Aside from the vigorous fondling of the bread at the end (which seems to be consistent thing with indian street food vendors), there's no hand contact with the cooked food.

The idea of gloves is that people outside or some restaurants shake hands alot exchange money pick their nose and they don't really care who you are. And the kitchen they are working in a place were bacteria or viruses might spread from another people touching the tools you are using. might not be as clean as the one you have at home. Does Gordon Ramsay wear plastic gloves when he cooks? How about any professional chef. Wearing plastic gloves is actually a terrible idea for cooking. Think about it. Do you really want tiny plastic particles in your food? Just wash your hands well and that is more than enough.
