No, it isn't. I've worked as a cook long enough to understand that this is very doable. Just make sure your knife is sharp enough and roll with it. Try it out. You don't need a knife like the guy in the video has, just a regular chefs knife, preferably a bit thinner, is perfect. You can do this! Now go out to the store, buy the ingredients and make this.

I am not Chinese but I used to manage a very posh Chinese restaurant for over twenty years. This is authentic, with the exception that we used to use a bit of lemon curd to thicken the scause up a bit. I doubt many people have a Turbo Wok. The secret to great Chinese cooking is that wok with its crazy hot heat. Most of the ovens and ranges in the western kitchens, are incapable of reaching high temperatures very quickly, and as a result whatever its put in the wok lietrally boils in its own juices rather being stir fried. If its practical just use small quantities.

This is the best place I've learned on how to cook lemon chicken; easy, clear and quick method. The thing I like about this is that you used cornstarch sparingly when coating the chicken. I've eaten lemon chicken full of breading and get soggy when the sauce is mixed.

From someone who actually made the lemon chicken recipe: it's the best lemon chicken I've ever had, and it wasn't that hard to make! For the lemon peel, the trick is to use a really sharp knife and keep your palm open so you don't hurt yourself, and go slowly but confidently. Avoid excess sawing motions, and try to just scrape layers a little at a time until you're at the yellow peel. It's worth the patience!

For what it's worth, you can achieve the same thing by using a vegetable peeler. You won't get the long picturesque strands, but the flavor will be the same. Chefs mostly do it like this because they'd rather have mastery and efficiency with a small range of versatile tools, than be fumbling with a thousand different specialized tools and not have nearly as much experience with any of them. If you have a fire and a reliable cleaver, you can cook almost anything.

But people shouldn't be put off from trying what is actually a very simple recipe just because they don't have the godlike knife skills to attempt one very showy part that does almost nothing to change the finished flavour. Literally the only reason for all that showmanship with the knife is to produce the visually appealing little shreds of lemon peel on top of the dish. Zesting or peeling the lemon normally won't change the taste in the slightest.

A lot of Chinese "restaurants" in western countries are run by people who are NOT professional chefs. They're immigrants who for whatever reason couldn't get jobs in their original professions so just opened a restaurant because it's an easy way to make money even fi you can't speak the local language. Oh man, how far from the truth you are... Most kitchens I've worked at, you'll always find a worker or 2 which can carve flowers out of beetroots or even make a buddhist fruit figure out of a melon but the truth of the matter is, most people don't want to pay for quality, at the very least not often where these takeaways are opened. You'd be very surprised what the average wok chef can do in a simple chinese takeout. You'd cry abuse just working in it's kitchen for a day 😄
