No, we Indian also add meat like mutton, Chicken in Curry and Dal ! We do this in Jammu and Kashmir region, aloo Gobi aur mutton mix curry ( Taari) with Bhaat (sticky rice). Meat is must in Jammu Kashmiri Cusine like Choole Ghosht, MuttonAloo, KamalKakari with Fish. Try Khata Mutton curry of Jammu region with Mutton dried mango pumpkin curry.

It's not that different but depends on which part of the country you are from. It's common to use curd to marinate chicken. In some dishes like butter chicken, it's common to use cream and of course butter. Also in some parts of India like Bengal putting big slices of potato in chicken curry, bigger than she cut, is normal. Not sure about carrot. Also for thick gravy or dry chicken masala most of the gravy comes from tomato and onion, not water. Might be a little bit of water for cooking but that gets evaporated. I hope I am making sense.
