It's interesting watching videos from an AAA developer 👀. I think it would be cool if you talked about the AAA industry in some of your videos.

Not sure if this might help you, but when Blender smooths objects (right-click > Shade Smooth) it can sometimes look like it does at 8:00. My fix for this was to go to modifiers and add a modifier called "Edge Split" (located in the second column, sixth row in modifiers) and set it to 0 or to a more appropriate value. The edge split modifier make it so that when an object is shaded smooth you can specify at how small of angles should be smoothed. (So the angles that are smaller or equal to the value specified become smooth.) Smoothing in blender is often used to make an object have no edges showing. (Example: duckduckgo.com/?t=lm&q=blender+smooth+shade+vs+normal%3B&iax=images&ia=images&iai=http%3A%2F%2Fwww.3dtutorialzone.com%2FNormals%2F3.jpg) Since you are creating a voxel-style game you probably would not need to use smooth shading. In Blender, you can also select edges that go against smooth shading and always stay shown by selecting edges on an object in edit mode, right-clicking, and selecting "Mark Sharp". Not sure if this information will be useful or relevant to the issue at 8:00, (As I started using Blender, smooth shading was always an issue until I figured it out.), however it might be useful if a more perfectly round or more smooth object such as a cylinder or sphere is needed.

Damn, this looks very helpful! I actually got into the same issue with my enemy models, will try this solution. Thanks!
