In Japan, Chicken eggs are generally safe to consume raw or partially cooked. Salmonella may only be present in eggs when the outer shell surface has been exposed to poultry fecal contamination. The eggs in shell are washed and sanitized before being sold. At the farm level - the Chickens are vaccinated against Salmonella, the feed is heated to kill Salmonella, and the coop houses are regularly disinfected. As a result, Salmonella occurrences are rare.
