When I was in Jakarta, one of the Indonesian dishes I was recommended to try wat Ayam Taliwang, a type of grilled chicken that originates from the island of Lombok, and is famous for being incredibly spicy. When I heard grilled chicken and incredibly spicy, I knew ayam bakar Taliwang was something I needed to eat.
In Jakarta, I searched and found a restaurant called Ayam Taliwang Rinjani, and so one day for lunch my wife and I headed over there… little did I know I would have a near life changing grilled chicken experience.
There were a couple of different types of grilled chicken you could order, including a sweet version, a spicy version, and the extra super pedas spicy version. We ordered one of each - the chickens were spring chickens so they were small and you can easily eat one or two whole chickens yourself. At the front of Ayam Taliwang Rinjani, they had a glass cabinet full of partially grilled chickens. Then as soon as you order, they take a chicken, cover it in whatever sauce you chose, and then put it back on the grill. The super extra pedas (meaning super extra spicy), was dunked in a bucket of sambal chili sauce and oil, and then put on the grill. When it was finished, there was literally about a 1 cm thick coating of chilis all over the chicken.
Ayam bakar Taliwang proved to be one of my ultimate favorite Indonesian dishes. The chicken itself was extremely flavorful and bursting with juices, and because it was grilled on a high heat it additionally had a nice flame flavor. But the greatest thing about the chicken was the incredible amount of chilies piled on top. It was truly a chicken changing experience!

mark the reason why the wings is folded behind the drumstick is called trussing: it's a form of getting more surface area and better for cooking thoroughly and it's for when you don't wanna use strings or ties

Great video Mark, reminds me of the Mie Goreng take out I used to order when working in Sumatra, it came in a pandanas leaf with spicy noodle, fried egg, half grilled spicy chicken, cucumber and tomatoe with crispy shallots on top, the chicken flavor is what stood out, it was, as you say, concentrated with great eating texture, keep up the good work Mark :)

The Sasaks (the natives of Lombok) insist on using only young free-range chicken to make this dish, hence the size. The chicken meat is really flavorful because they sautéed the whole chicken with spices before sending it to the grill. Mm-mmmh! I'm salivating just imagining how it tastes like! 😋

The food is nicer dude... Like looking at the shirt from a designer perspective its rather simplistic. Black shirt with white text centered to form a square with different font sizes and a chili on it. Not saying that the shirt isn't nice from your perspective but from my perspective its just another shirt made without a lot of thought to it. Now before you compare brands such as Supreme with this shirt, you should know that the font and color actually do make a difference with the overall appearance. Those kind of logo's are made in such a way that it has an psychological affect towards the brain creating a natural attraction towards it. Anything worth complimenting in this video that really stands out are either mark's reviews, Ying's camera's skills or the food itself in my opinion. Cause in the end, a compliment given without any meaning is better unsaid than said. Maybe its just that I don't really think the shirt is too amazing and in your perspective it must be a really nice shirt.

hi mark I recommended to try all Javanese cuisine , if you have lot of time you should try the most famous Javanese cuisine like Nasi gudeg , nasi Liwet , tongseng , Sate Buntel ( warp satay from fatty young goat meat) , rawon , tahu campur , rujak cingur, lontong balap, and.. . oh gosh there lot of them I cant barely mention it one by one . keep your good work and I'm waiting for your next video
