This is the same method as used by very old school butchers when making hams. The process still to this day wins almost every quality award above mass produced hams, and a FAR superior product. I cannot wait to try this on fish, it's brilliant. I will also try it when brining for smoked fish. Thanks heaps, this channel is seriously good.

Congrats on 700k, brotha! What a cool way to celebrate too. That technique was so interesting, and so intricate! I can see how you could get super creative with flavors. Even as simple as a lemon/wine sauce instead of Dashi or Soy sauce. So cool to watch!

In France they use a similar technique to make ham. They use the femoral artery to pump brine through the meat and flush the blood.

Good video! FYI... besides store bought sedation stuff, I've used clove oil in the past, to sedate my koi, so I can fertilize eggs or transport fish.
