Since the meat is sliced thin, I wouldn't cook it very long on either side. I think rare to medium rare at best would compliment the aged beef. Just my take on it.

Jeffery Bauduin I'm just asking but doesn't dry aging also make it more tender on top of the flavor? If so maybe the tenderness even though Wagyu is already tender is what he was going for. Either way it looked damn good.

skip to 0:25 if you just want the usual start to an AlmazanKitchen vid. AlmazanKitchen, I think the new intro is nice but, i think most people really dont care for it and in fact it might bother those who use these vids as ASMR or something. Without an intro, your vids just seem more indy and boutique. Nothing in the video itself indicates any change in filming/editing style so the intro/preview scenes just feel awkward and in my opinion, you should hold onto the minimal, natural theme you guys have going already and just get rid of any intro and previews in this, and future vids. Again, just my opinion! :) Still a great video and amazing channel. I support you guys fully regardless
