I don't care what anybody says. I love hipster coffee. They do really know their stuff (most of the time). I use to be one of those who would use excessive amounts of cream and sugar/syrups/sauce to mask the bitterness of bad coffees. Now, I can enjoy coffee black for good quality coffee. Since, it's a luxury to get that type of coffee. I've also scaled down on drinking coffee. And that's been a good thing too. I just know how to appreciate coffee more.

I roast my coffee, grind it and brew it ala Turkish, pour over (v60), cafetera or French press .. and I drink it black, without sugar. But I don't drink less of it. Also, I do not look or behave like any of these insufferable attention whores.

I love this trend. For 5-10 bucks daily, I can geek out on a piece of my life that is ordinarily mundane and share it. At the office, I have a hand grinder, hario v60, kettle, paper and some decent coffee. With that, I get a social and sharing experience that I look forward to daily. My favorite part is that also bridges the gaps between teams.

my hario v60 is collecting dust. too time consuming to use. nowadays, I just toss some fresh ground coffee on boiled water the filter with a strainer, if im feeling it. most days I drink instant coffee.

I'm probably going out on a limb but...While I can see why some of the people in this video can be seen as "hipsters" or "a little too into coffee." I'm quite certain that the majority of those commenting with immature / mocking comments both don't drink specialty coffee and or seek to enjoy and explore the craft behind the foods they eat and beverages they drink. People should be able to develop a passion and appreciation for whatever they want without being mocked by those who don't have any desire to delve past what's right in front of them (e.g.fast food, processed foods, cheap beer, chain store coffee...) (especially in the US).

I suppose I can make a general statement in regards to the hipster influence if you will. I always believed the most negative aspect of hipsterdom is taking and using coffee traditions and such and adding such an ego and a sense of entitlement to their knowledge. There is nothing wrong with professionalism, passion, and pride in your product in regards to coffee, but it is when you act superior for your knowledge, that to me is a disservice to the passion and traditions. (Insert death metal, jazz, craft beer, and the like for coffee, for other examples)

The cool thing about coffee is that you can drink the best coffee in the world for like $25 a bag. There are your Kona and Geisha coffees that are much more rare but they aren't necessarily better. There are plenty of award winning coffees for a very affordable price.

The best coffee ever is found in small towns around the coffee axis in Colombia, drinking coffee there blends amazingly with the authenticity of the places and people.

There are some pretty cool people associated with speciality coffee: James Hoffmann and Tim Wendelboe are few that come to mind. Then there is this dude out here talking about paring coffee with fish as coffee culture... SMH!

Teavana used to have more than 375 specialty tea shops. They were all over the place, and featured a large, creative selection of very nice teas, of all kinds. Reminded me of great tea shops in Canada and other Commonwealth countries, which probably inspired Teavana's founders in Georgia. Then Starbucks bought the company, closed all their stores, and trashed the product lines. The greedy mermaid empire reduced a fine, inventive company to a few meager items. Vulture capitalism.

Acidity and sourness isn’t associated with high brew temperatures... low temperatures produce sourness. ‘Acidity’ is such a broad term it almost means nothing on its own. High temperatures often result in over extraction and can highlight the inherent ‘roast’ notes in the coffee (which isn’t good by the way)

As a European with 300 years of coffee consumtion history, it blows my mind to hear that: a) it all started with instant coffee... b) Starbucks made fresh ground and brewed coffee known to the American people... c) the way these statements are casually made as if they were a global phenomenon... that only applies for the US, the rest had a coffee culture long before that... (e.g. Dallmeyr, Café Procope etc...) Now I understand why by Americans, Europeans are seen as "cultured".

The waves of coffee thing originated with Trish Rothgeb in 2002, not that long ago. Second wave coffee is my favorite, and Starbucks is a weak example of it. It began with Alfred Peet in Berkeley in the 1970s. I worked for a roaster in Oakland in the 90s, and the older Italian gentleman who started it said that many of the very hard bean, high grown coffees were no longer available. Those coffees withstood the intensity of dark roasting, yielding complex and full bodied cups. Somehow along the way, the so called third wave became obsessed with basically a cupping roast, which for some of us is way too underdeveloped. In the end, it's all a matter of taste.

It'll be interesting to see how these third wave roasters and coffee shops handle the pandemic situation. It seems like trying to sell premium coffee for a premium price will become ever more difficult as we see a regression to even a first wave setting where people mostly want affordable coffee.

Have you tried decaff? Honestly just asking out of curiosity. Because my logic is, if you respond well with a decaff coffee then maybe you can goof around with the brewing method to get the lowest amount of caffeine while retaining the flavours. Btw, Indonesian?

Logika saya berarti cari cara brewing yg hasil caffeinnya ga banyak. Mungkin bisa coba americano/long black pake arabica yg bodynya paling tebel, dg begitu kandungan kafeinnya lebih encer karena espresso+air. Kalau pour over sendiri kafeinnya malah lbh banyak dari espresso seingat saya karena volumenya lbh banyak, CMIIW

The whole 'history' part of this is pretty USA-centric. It's almost as if those 500 years of Yemeni, Ottoman, & European development didn't happen at all. Plus, if you're going to play off the whole 'commodity' vs 'specialty' coffee thing, surely you'd at least mention the London Stock Exchange and all that.

Even a 15-second whoosh through the history of the coffee industry is cheapened and ground way too coarse if it fails to mention George Howell. The idea that there was no specialty coffee business or industry before Starbucks is an advertisement for the limited horizons of youth...

Micah Luarez The coffee community, more than any other industry, puts extreme importance on fair trade and responsible growing. Some roasters will even post the amount they pay farmers for their beans, and most all roasters are shunned by the community should they not meet the standards of fair trade that are expected in the coffee business.

Fair trade is not fair, it is just a 'beating your wife less' model, beating your worker less. Fair trade "in order for fair trade to be fair the conditions of social protection and remuneration should be identical between producer and consumer" (www.maxhavelaarfrance.org).These clowns give exaggerated importance to their job based on dramatizing their labour, real labour is in production. Consumption society is consuming its roots, suicidal society.

@@gaylayaffa7655 most coffee this day and aged is roasted with propane electric gas. The difference between roasting coffee beans with alderwood logs is that the wood roasting method locks in the enriched flavor and is much healthier to consume than the new way coffee are roasted. I think only 20 percent of coffee industry still use traditional wood roasting method. I know this for a fact because I'm a master roaster and I can reassure you that wood roasting is much better overall
