The thickening agent still gives me nightmares. I used it when I was working in an old folks home and the experience of making coffee slime for people who have difficulty swallowing will always haunt me.

@techmare None that I know of. It is a great product and it improves the quality of life of the patients who have to use it. I imagine it's not too bad once you're used to it, I just hope I never need to become used to it.

I find it even more amazing that a pack of flour has an ingredients-list... when i buy a pack here in germany there's only one ingredient listed... guess what, it's flour!

If you ever have a stroke someday you'll likely be drinking it too, for a short time anyway. It's really a medical product because the thickness helps the water go towards you stomach and not you lungs which causes aspiration pneumonia. So it's not just some random weird drink that Americans drink for the hell of it.

Also if you know anything about emulsification you know about how restaurant milkshake mix sticks to the walls (easy to clean though) from the heat and the gelatination of the ice cream product, dairy is not naturally sticky until sugars, thickening agents, salts or fermentation are put into the process. Hell, even homemade ice cream doesn't stick so bad to your hands, the wall, or anything it gets a hold of. Remember, emulsifying dairy product strengthens the fat molecules, gives them extra strength and helps separate the cream and syrups from the water that the ice in ice cream creates. This makes the fat and sugars that's left over much... Stickier than normal.

I've made homemade mayonaise by hand exactly once. My arm was sore for three days afterward. He's underselling just how much effort it takes. When I did it it was a solid 15 minutes of whipping it as hard and as fast as I could.

A non liveable minimum wage. A measly $1400 stimulus check during a global pandemic, yet supposedly the richest country in the world. Alum is also used for making pickles crunchy. I use alum as a cauterizing agent for mouth ulcers that I get from time to time due to medication.

A rule of thumb is that if you can sell it in the EU it's probably safe. We have the strictest rules on what is and isn't food, so if it has an E code it's fine at the concentrations at which you use it.

Anyone wondering what the herb is that makes Big Mac sauce taste the way it does: it's dill. I tried loads of internet recipes before I came across it. It's diced white onions and dill that make it taste right.

Carroway seed powder is what I can taste in the BigMac sauce and additionally to the mayonnaise an egg yolk mixed into the sauce. Onions are part of the sauce. Carroway seed powder is also very prominent in their tartar sauce on the filet-o-fish.

It's all simple: burger buns are so different because the yeast didn't have time to work in a regular bun. The cracks on the bun confirm this.Time for yeast to act saves money for fast food producers. *This is where chemistry comes into play! It makes money because it shortens the process!*
