You won't! I was thinking the same when I used one in the beginning, but then found out how they were built. It's graters, not knives doing the job. So don't worry!

The shredders are on the outside edge of the fly wheel, out of the way. You could stick a carrot (or your finger, not recommended) straight down in the middle and it would not get cut until it reaches near the bottom and impellers knock it to the edge where the spinning blades are. Nobody's gonna do that while it's running. It's safe. I recently got the 3/4 hp InSinkErator Evolution Essential XTR Multigrind and it is amazing. Quiet. powerful and pulverizes to a fine mush just about any food item (even bones and egg shells).
