Ingredients:
To assemble the zongzi, you’ll need:
75-80 dried bamboo leaves (2 per zongzi. Toss out broke leaves!)
5 pounds uncooked glutinous rice or "sweet rice"
3 lbs pork belly (Preferred)
Roast Chestnuts (optional)
Kitchen twine
For the pork marinade, you’ll need:
¼ cup light soy sauce
3 tbsp dark soy sauce
4 tsp salt
5 tbsp sugar
3 tbsp Shaoxing wine
1 tsp white pepper
1 tsp five-spice powder
¼ cup water (you may not need this, but if you do, you’ll add 2 tablespoons at a time)
For the rice marinade, you’ll need:
5 tbsp light soy sauce
5 tbsp dark soy sauce
1½ tbsp sugar
2½ tbsp salt
