It's not actually healthy baking soda isn't good for health and plus our traditional style is more healthy as fermentation helps to increase good bacteria in gut ....

Q1-How long can we store the premix? Q2-Does the premix needs to be stored in refrigerator? Q3-Sooji needs to be added raw to the premix? Or it needs to be roasted? Q4-Can we add eno salt to premix instead of baking soda?

This can be done for a quick fix but..the liquid batter from grinder is best. This is all dry with water mixed to make the dishes. Urad dal and rice all let out their own water after soaking and grinding into a sticky paste, which is very important for both men and women, especially women. Strengthens the muscles and bones since it grinds in its own water and also ferments, inducing good bacteria. If we go for fast methods, we will lose health. Better to buy batter if you are that busy than to make a dry one like this. Also if you use this on a regular basis, you will notice the dosa forms a lot of cracks and gets dry fast. You won't get cracks and the dosa will be soft with the usual dosa batter with grinder and fermentation method. You are literally consuming dry flour with water. Not good. This is ofc a good idea in a pinch. But not for everyday.

Wash all the ingredients strain it and then spread it on a clean cloth and either sun dry it(cover with a dupatta) or air dry it and then dry roast and then grind
