This is the recipe of an Instant Lime Pickle in 20 minutes!
Usually it takes 2 days to soak the lemons before you make the pickle. But I have shared with you a tip with which you can cut down the 2 days’ time to 20 minutes only!
So now you can make Lemon Pickle instantly.

Recipe :
Instant Lime Pickle
Preparation Time: 20 minutes
Cooking time: 5 minutes
Ingredients:
20 lime
2 tbsp mustard seeds
2 tsp fenugreek seeds
4 tbsp kashmiri red chilli powder
1 tsp turmeric
2 tbsp salt
½ cup mustard oil
2 tsp mustard
¼ tsp hing
Method:
In a large pot, boil 1 litre water. Add the limes, cook for 2 minutes and remove from heat.
Cover and rest for 15 minutes or until lime softens.
Remove lime from water and pat dry.
Chop the lime into small pieces and take into a large bowl.
Dry roast the mustard seeds and fenugreek seeds till fragrant.
Grind them to a fine powder.
Add the powder to the chopped limes with the red chilli powder, turmeric and salt.
Mix well.
Heat oil and allow to cool a bit.
To medium hot oil, add mustard seeds & hing.
Pour the oil over the pickle and mix well.
Enjoy instant lime pickle.

very nice. I prefer Lemon pickle without any oil. It is much healthier. Just Lemons, stuff them with salt and Haldi and keep in tight glass container in few days it is ready. Try it.
