I made the recipe with only minor changes which wouldn’t make much of a difference: I used jumbo eggs, because that’s what I have. I also don’t have applesauce, so I didn’t use that. I added about 1/3c chopped pecans, too. Other than those things, I stuck to the recipe. It turned out fabulous! I had some batter left over because I didn’t want to overfill the pan. I didn’t want to throw it away, so I put it into a small microwave safe container and microwaved it for 90 seconds. Voila! Mug cake! It’s awesome!

It’s a lot lower carb than if you used AP flour and regular sugar. And not enough maple syrup to say so. The fact that it’s gluten free is good, as well as lower carb. And super yummy.

Two things, bubeleh: 1) You should look for oil spray without propellant for nonstick surfaces. Propellants break down the coatings over time. 2) While erythritol (a sugar alcohol) is supposed to have fewer, shall we say, "unfortunate digestive side effects" than some of the other sugar alcohols (like xylitol and mannitol), for some people it can still have these effects. I have used the Lakanto in recipes without issues. But trust me when I say that these effects, if you do have them, are VERY unfortunate. So make this at home and be sure the erythritol works for you before going out someplace. And don't wear white pants, just in case. Also....if you are, or have friends who are "super-tasters", they may perceive this sweetener as having a bit of "heat" to it, or as one friend of mine who IS one describes it, "zingy." I can't tell the difference, but some can.

Perfect texture!!!!!💕 BUT, I made one recipe for the instant pot and one (as muffins) in the oven on 160 degrees for around 35 mins. Texture was perfect! The instant pot version rose, I released a little pressure by mistake, left it in for 10 mins as you said. It rose, but was still uncooked when I took it out so put it in the oven. I have faith that it will work out great. And yes, I just wanna eat it all, yum!😋. Thanks 🙏

2 days ago I got my Instant Pot Duo Crisp Air Fryer and I am very interested in using it heavily. I made a great Hungarian stew with it. My son and daughter-in-law have a very negative reaction to gluten. I baked already gluten free cakes in the oven but I am ready to use as much as possible my new toy. I appreciate your straight forward recipe. I loved the fact that you use a PTFE free baking pan. I don't know why Teflon is not banned by most governments and sold heavily all over the world, being incredibly toxic and a well documented carcinogen. I will bake 2 cakes as soon as possible. One for my sweet-tooth-husband and another for my son and daughter-in-law.

There’s a flavor compound in calves that’s also in bananas. A bit of ground cloves - 1/4 tsp., say - enhances and banana bread, muffin, cake, etc.

If you cannot have almond flour because of nut allergies, you can dehydrate shelled sunflower seeds and then grind them into flour. It substitutes one-for-one.

Love this recipe but I find it easier to do it in my airfryer - takes a bit less time and comes out every bit as good (cakes in the air fryer are fantastic!). Plus I can use a small/medium loaf tin and not a bunt pan which I don't like as you can't really get an even slice to fit in the toaster (here in Australia we like our banana bread toasted!). I also add about 80gm of chopped walnuts into the mix for that element of crunch, though pecans work just as well.

I tried the recipe with all the right ingredients. It seemed like it wasn’t cooked all the way. I tried again and added five more minutes to instant pot and it still seemed under cooked. Very moist, tastes great, guess I need to get used to the texture. I also bought your cook book. Great videos!

Hi Jeffrey. If I wanted to make zucchini bread instead, I assume the other batter ingredients would be the same. Question is: do I add the grated zucchini at the beginning and use a hand mixer on it? Not knowing how the nuts would fair in the instant pot I'd probably make some sort of glaze with walnuts chopped up in it not sure how without using sugar..... experiment....

@@OutdoorsDadBC Same. Love the IP. I have made two very successful pineapple upside down cakes in the IP. They came out perfect. I made a banana bread last night - not Jeff's recipe, another one. It seemed to come out half-cooked. The instructions were to cook on high pressure for 45 minutes. I've looked at a few IP banana bread recipes this evening and all of them have baking powder and baking soda in the recipes whereas the recipe I used had baking powder only. Also in all other recipes it seems to be high pressure for a minimum of 55 minutes plus slow release for another 10. I will probably try a different recipe later and see how that turns out but I think longer cooking time might be the answer. My IP is the 6L Duo.
