I just made this recipe, actually I made a triple batch and cooked all three at the same time. It was absolutely delicious. I used plain organic yogurt. I did add a teaspoon of vanilla to this recipe though, so it was a tablespoon for the triple batch. I also used a little more than 1-1/2 cup bananas it calls for because I had huge bananas so I measured them and it was closer to 5-1/4 cups for the triple batch (1-3/4 cups each). I coated the top with the turbinado sugar similar to the "Sugar In The Raw" Carla used and it made an awesome semi-crunchy texture to the top. I used some Ghirardelli semi-sweet chips in one of them because it sounded so good and it did not disappoint either. Everyone including myself who has tried this banana bread has said it is the very best they have ever tasted. I'll be making more at Christmas time. So easy and so good. Mine took about 1 hour 20 minutes to cook and it was Moist (capital M intentional).

I can't get enough of Apple Bananas and even when they are brown on the outside they are still firm and not at all mushy liked regular bananas. I made this. It's excellent. If you have molasses but don't have dark brown sugar, don't fret! Adding about a tablespoon of molasses to one cup of white sugar or about a teaspoon and a half to a cup of light brown sugar will give you the same awesome flavor and won't affect the moistness of the final loaf. Also, don't worry about getting little pockets of molasses in the final product, by the end after all your mixing is done, the molasses will have fully incorporated into the batter. If you really wanna make sure the molasses is incorporated though, pulsing the sugar and molasses in a food processor will incorporate the molasses fully into the sugar. I don't recommend this though, because it may also break down your sugar crystals and that might make creaming your butter unnecessarily difficult.

For those of us looking for the measurements in METRICS: 140 gr flour 200 gr sugar 55 gr butter 225 gr mascarpone Rest of the ingredients are easier to follow. You're welcome
@Continuetogo5 жыл бұрын
Don't follow this it is incorrect. How did you get 1/3 of a cup of Mascarpone weighing 225grams ? It would weight more like 75-80 grams

I’ve made this banana bread twice now, the first time with sour cream and the second time with plain yogurt, and both times it has come out PERFECT and has my friends DREAMING about another slice!!!!!! Absolutely a show-stopper and so easy!!! Also, I don’t own a stand mixer, but my electric mixer (or just some heavy-handed whisking for a longer time) has worked perfectly well! LOVE this recipe - my new go-to baked good!

Also, I didn’t use parchment paper because I was out of it, just layered on some Pam and was totally a-okay!

Yesss!! I grew up with The Fanny Farmer cookbook and putting cream cheese on banana bread too!! I usually add vanilla extract, cinnamon, nutmeg, and cloves to my bread though - it really takes it up a notch! 😍

My banana philosophy: 1) don't eat them when even slightly green 2) mixed in to foods (smoothie, banana bread) bananas can be tasty 3) on it's own a perfectly ripe banana is an ok snack, but not much more 4) if eating more then one banana in on meal I'll feel a bit ill (it's a texture thing, you o know?)

Agree this is the BEST banana bread recipe!!! Just make it for my family. They loved it. Used a glass pan it turned out beautiful brown and crispy outside. While the inside was MOIST! I made it 1/3 w/ chocolate chips, 1/3 plain and 1/3 raisins. Thanks for the 4 minute whipping tip and using a potato masher. This is a keeper recipe!!

Delicious! It is 1:00am, I had to bake this bread. I substituted 1/2 teaspoon sea salt. Only put 3/4 cup brown sugar. Parchment sleeve is a great hack. My glass loaf pan was perfectly fine. Check the timing. I pulled mine out oven~at 50 minutes. The TEXTURE is epic ~ a cake and bread. AWESOME!! 🍌Thank you Carla.
