INSTANT POT CHICKEN STIR FRY│BUSY WORK Week Recipe│Who Needs TAKEOUT│Dining With Tara
I love a super quick recipe that is not only super delicious, but packed full of nutritious ingredients. This entire meal comes together faster than placing an order at your favorite takeout restaurant. This is a one pot wonder at its finest - fully customizable for your vegetable preferences. INGREDIENTS:
1 cup rinsed and drained White Basmati Rice (may substitute any other white rice, pearl couscous or quinoa)
1 cup Filtered Water
1 pound Chicken Breast cut into thin strips
1 cup Broccoli
1 Green Pepper
1 Red Pepper
⅓ cup Baby Corn
1 cup Snow Peas
¼ cup Soy Sauce
¼ cup Oyster Sauce
¼ cup Rice Wine
⅓ cup Garlic Broth (may substitute chicken or vegetable stock)
⅛ teaspoon Sriracha Powder (optional but recommended)
3 Garlic Cloves
1 Shallot
¼ cup Dark Soy Sauce (optional)
Drizzle of Avocado Oil
INSTRUCTIONS:
1. Chop shallots and mince garlic. Chop broccoli and slice or dice peppers. Set Instant Pot to saute on HIGH and add a drizzle of avocado oil. Add shallots and cook while stirring for 30 seconds. Add garlic and saute for 30 seconds. Add chicken and sriracha powder and stir to brown chicken for 30-45 seconds. Add rice wine, soy sauce and broth. De-glaze the bottom of the pan. Add trivet to the pot. Place rice in a heat proof bowl with water and place on top of trivet. Press cancel and set for HIGH pressure for 4 minutes. Allow 10 minutes of natural pressure with IP, then perform a quick release.

Remove the rice from the IP and set aside. Remove trivet. Keep IP on keep warm setting. Add all veggies to the pot, along with dark soy sauce. Stir and then cover for 5 minutes. If softer veggies are desired, keep covered for 5 more minutes or turn pot to saute for 3-5 minutes. If thicker sauce is desired add a cornstarch slurry and bring pot to a simmer for 2-3 minutes. Place up delicious meal and enjoy!
STOVE-TOP INSTRUCTIONS:
1. Cook rice according to package instructions on the stove. Chop shallots and mince garlic. Chop broccoli and slice or dice peppers. Add a drizzle of avocado oil to a wok or fry pan. Add shallots and cook while stirring for 30 seconds. Add garlic and saute for 30 seconds. Add chicken and sriracha powder and stir to brown chicken for 30-45 seconds. Add rice wine, soy sauce and broth. De-glaze the bottom of the pan. Bring to a simmer and add all veggies to the pan, along with dark soy sauce. Stir, reduce heat to low, and then cover for 5-10 minutes, or until chicken is cooked through and vegetables are tender. If thicker sauce is desired add a cornstarch slurry and bring pan to a simmer for 2-3 minutes. Place up delicious meal and enjoy!

A huge winner! We used the sauce packet from the frozen oriental stir fry and used that in the beginning after sauteing the chicken for 30 seconds and added 1/4 cup chicken broth and about 1-1.5tsp corn starch. It actually worked! Thank you for the inspiration!! Next time I’m going to chop up some fresh veg

Thank you so much for posting this! There are so many videos on KZbin about Instant Pot ‘Chicken and Rice’ or ‘Stir Fry’, I was looking for one that included sautéing the onions and chicken first. This is how I have always done it the Ol’ Fashioned Way. I loved the fact you added the addition vegetables at the end and kept on ‘Warm’. The veggies were crispy and had just the right amount of heat The only variation I did was to add the rice directly into the pot with the chicken stock and other sauces you recommended. It came out awesome. Thank you!

Good video You obviously understand the the theory of using a Instant pot I when people say put vegetables in ! One step! Then the vegetables are liquid! Good job

Thanks so much Cris! To deglaze all you have to do is pour in either some water, broth or even wine or beer (just a few tablespoons) - and using a wooden spoon or silicone spatula - scrape the bottom of the pot to remove any burned bits. If you skip this step - it will most likely say "burn" when it starts to pressurize. Removing all the browned bits ensures that your recipe will cook properly 💙

Great recipes! I was wondering if there is any way of doing it with brown rice which takes more water and more time… I guess I answered my own question but I would like to see more recipes with brown rice. Having said that I do have some good basmati rice to make this recipe

Dining With Tara I’m always looking for instant pot recipes. Additionally since I started Nutrisystem, i’ve only had white rice twice in the last year I’ve been eating a lot of brown rice which is surprisingly tasty. So if you have anything like that I would like it #WholeGrainsAreGood HAH! 😮

I know how to stir fry in a wok with fresh vegetables on the stove top I was just wondering how to stir fry with frozen vegetables and I was thinking maybe in a stainless steel Bowl just started on the stove top with a little oil and sautee garlic onions and Ginger then put it into the instant pot on the trivet with the cup of water then into the bowl add the frozen vegetables and maybe mix in the soya sauce, sesame seed oil and oyster sauce then cook in the instant pot and maybe at the end when you take it out add in your water and cornstarch mixture. would like to see you do something along that line. I am only cooking for one

Absolutely! To speed things up you can thaw them on the counter while the Instant Pot is cooking. Then just throw them in when you would add the fresh veggies 💜

I heard you aren't supposed to use Glass dishes in the IP. Can you tell me if that's true and if not true, what sort of bowl did you use for the Rice? I am new to the IP and want to make a healthy meal for a lady interest of mine :) Early on in dating and want to do something nice.

Aren't you sweet! She's going to love it! I use glass all the time. The bowls I use are tempered heat proof, oven proof, microwave safe bowls. I've had them forever. I don't put the bowl directly in the bottom. It's on a trivet. I also use stainless steel - but it takes longer to cook with stainless so I use those when cooking brown rice or something like that, with the pork. Can't wait to hear what you think 💜

Rice wine vinegar can be replaced with white vinegar. Rice wine vinegar is a little sweeter in taste.

I don't understand what the point of cooking this in an instant pot is - the chicken is sautéed exactly as it would be on the stove, I'm not clear on why you would leave it in the cooker with the rice after it's fully cooked from the sautéing - doesn't it get rubbery and overcooked? And then you add the vegetables that you've pre-cooked somewhere else. So you're just using the instant pot as a mixing bowl at that point? The only benefit I can understand is that the rice cooks faster than in a rice cooker. But the rest just seems a lot more complicated than simply using one rice cooker and one pan on the stove.

Kenny I can appreciate what you are saying. The chicken actually becomes more tender and flavorful with this method! I did not precook the veggies. A hack is using frozen veggies. They become tender very quickly when added at the end of pressure cooking. I suggest trying the recipe as written 💙
