I've made this lovely cheesecake a couple times, now. The filling, the creamy topping, and the ganache are all just wonderful. As a lifelong baker of zillions of all sorts of pies and desserts, I get so excited to find a really good keto recipe. The last time I made it was for my coffee-loving son. I changed it up a bit with coffee flavored ganache for him. Delish. I'll keep making this one, certainly! Except... the crust. Bleah. I mean, it's not terrible, it's just not outstanding enough in my opinion to hold up to the excellence of the rest of the parts. Some of my issue is the bland flavor of the crust and some is the texture. Graham cracker crusts were always my favorite in my pre-keto days. Now I am on the hunt for a crust that approximates a graham cracker crust. With the coffee cheesecake, I did some research and first toasted the almond flour in a dry pan, as well as added some cinnamon. It was kinda better. The golden color was an improvement. It was still missing the nice gritty texture and graham-ness that I like. I could probably purchase keto ginger cookies or maybe some other cookies as a base, but I prefer to avoid the awful ingredients in store-bought 'keto' items. I may end up making keto graham crackers from scratch with which to make the crust. I might also try baking the crust first to see if I can make the final product less wet and doughy. Pre-baking the crust may be a waste of time, though, since it would ultimately go into the Instant Pot's moist cooking environment aaaaaand probably turn to mush anyway. Hmm. I wonder if the cheesecake could be baked crustless then slid onto a baked crust afterward?? Could be tricky but maybe worth a try? The wheels are turning... If anyone has any genius solutions please do share! 💕

Wow, this turned out delicious. I just added strawberries and left out the chocolate and blueberries. I have never used my instapot for cheesecake so was a little skeptical, but it not only turned out great, but it was so much easier. I have learned that if I need a recipe to search your collection first, every recipe I have tried of yours has turned out fantastic. You are simply amazing. On a side note, I know you have a no bake pumpkin cheesecake recipe, but I prefer the texture of a baked one. Do you have any suggestions for converting this recipe into a pumpkin cheesecake? Hi! 😊 For people who doesn’t want to use gelatine and just prefer to use eggs, they bake their cheesecake. But we also like the no-bake cheesecake, for me it’s more convenient as you don’t have to bake anything. Just chill it and you’re done.😊

Hi Karmen, let it stand for 15mins- don’t touch it after it turns off. The cheesecake will jiggle a bit at the center, it’s totally normal. It will set once you refrigerate it for 24hours.❤️

I have made a keto cheese cake many times I never cover or wrap it in foil, no need. And how did you get that out of the pan I used a removable bottom pops right out. I only cook for 28 min and leave in fridge over night. Seems like to much added steps no need, all that foil.

heartsafireful Wrapping pan in foil is insurance to keep water from getting in. Any removable bottom pan or springform pan have tendencies to leak or water may get in. I also tried making instant pot cheesecake using only paper towel or nothing to cover the cheesecake and it turns out fine. I just like how the top of the cheesecake cooks with a tin foil. At the end of the day, it goes down with your “own” preference. Regarding on how did I take it out of the pan, I just used a tall glass and put the pan on top to release it. You can watch my other cheesecake videos for reference.

I made this recipe, but since I am lactose intolerant and I live in Europe, the best and most affordable substitute I could find for the cream cheese was lactose free Mascarpone. The taste is nice, but the cake is falling apart every time I slice it. Is it normal?

Blanca Vega hi Blanca! 💕 thanks for giving it a try. My cake holds up nicely even if I slice it, I suggest to cook it more, so instead of 35 mins make it 45mins then manual release. Let it cool then refrigerate for at least 24hours but personally I make it 48hrs just to be sure the cake is already set. Hope it works! 😊

Hi Karen. You have to let it cool after taking it out from the IP then you can add your sour cream topping. Then cover it with a foil or cling wrap, refrigerate it overnight but I always do the 24hr rule for the cheesecake. Just to make sure it is all set. Then you can take it out from the pan. ❤️😊

I wish that direction was included. I’m not sure if it was because I put the sour cream topping on too soon, but I don’t think the 35 minutes was long enough. It didn’t set and the sour cream topping just sank in the middle. After it was refrigerated for 24 hours it just kept compressing. It tasted good, but a little too lemony. I used the zest from one lemon so I might cut the amount of lemon juice down. Will definitely try again and wait until after it has cooled before trying to add the sour cream topping

Hi! yes you can bake it in a water bath for 350°C until set and slightly jiggly in the center. Then cool down and chill overnight or better yet for 24hrs before unmolding/serving.😊
