Instant Pot Pork Tacos

Pineapple Salsa
2 cups finely-diced fresh pineapple
1/2 cup finely-chopped fresh cilantro
1 cup finely-diced red onion
Juice of one lime
1 teaspoon ground cumin
1 jalapeño, seeded and finely-diced
fine sea salt and freshly-cracked black pepper, to taste
Cooking Sauce
1 cup chicken stock (or beer)
1 head of garlic, peeled and minced
1/2 cup fresh orange juice
Juice of half a lime
1 teaspoon ground cumin
1 teaspoon paprika
optional crushed red pepper flakes
1 teaspoons fine sea salt
1/2 teaspoon freshly-cracked black pepper
