The instant pot I use is Duo: amzn.to/2XzMEBj
After making this video I found out that one of the Instant Pot models (LUX), doesn't have a low pressure setting. My rice preset does 12 min at low pressure and LUX does 10 minutes at high pressure. That's way too long. If you have the LUX model, I wouldn't recommend using the rice preset. You can try doing 5 minutes on high pressure, but I can't guarantee the results.
Scaling the recipe:

The ratio of water to rice changes if you are cooking larger quantities. Here are the ratios that work well for me.
1.5 cups rice / 1.5 cups water
2 cups rice / 2 cups water minus 2 Tbsp
3 cups rice / 2.5 cups water
4 cups rice / 3 cups water plus 2 Tbsp
Serves 4-6
1.5 cups sushi rice (300g)
1.5 cups water (354g)
50g rice vinegar (1/4 cup)
25g sugar (2 Tbsp)
6g salt (2 tsp Diamond Crystal Kosher or 1 tsp Table salt)

I had to try this at 1am because I was hungry and I have been wanting to find a way to cook sushi rice in the Instant Pot. The results were perfect, my rice was made following your instructions and I am now enjoying it as I write this comment. I have a special rice washer strainer I bought from Japan. Works pretty good. Would highly recommend it to anyone that makes rice on a regular basis.

If it's for just 1 or 2 people go with the 3 qt. I've had the 6, 8 and 3 and I'm happier with the 3 qt. Found myself not using the full size one because I over cooked quantity and was eating the same thing for ages.

Just made this, and hoo boy it was GOOD. Perfect fluff, perfect flavor! Looking forward to a rice-filled week! I'd love to try it with the soy reduction but the logistics of getting some ingredients here in the middle of nowhere are complex.

Thanks for this. I was always using normal long grain rice for sushi. I’m giving Japanese rice a try! Also your voice is amazingly soothing! You should do ASMR cooking videos!

This was really helpful! I live in Brooklyn and we have an amazing sushi-grade fish market in my neighborhood, Osakana BK. We're making a chirashi bowl tonight and will use this rice recipe with our instant pot to do so!

@@Shortyriri I haven't seen Unagi there, no! Typically if you want good eel, you'll have to pay for it. I try to stay clear of Eel and Tuna these days even though I adore them, mostly due to terrible farming practices w/ Eels & overfishing (read: 99% of the eel you get on the market is "dirty" pumped filled with chemicals and farmed in deplorable conditions in places with lax rules about this sort of thing), and fresh non farmed eel is endangered.

I have been making this sushi rice since Covid when I decided to learn how to make sushi. OMG - it is the best!!! I make regular sushi and also sushi bowls and everyone loves it. Great for a weekday meal and for company on a weekend. Enjoy!!!

Absolutely amazing!! I followed the washing, measuring seasoning and venting to the ‘T’ especially for 4 cups of sushi rice. But soak the washed rice for an hour like one person suggested above 👆🏾. And we had perfectly fluffy cooked rice. Thank you SO much. 🙏🏾💫🤍

I don't have InstantPot but this vid has good tips for cooking rice whether using InstantPot or rice cooker. I use an inexpensive rice cooker with 304 stainless steel pot - used to have a non-stick, but they eventually flake...the stainless is easy to clean by hand or dishwasher.

Better to soak the rice first for an hour, and then start the rinsing process. The presoak allows the rice to soak up maximum water, making it fluffier, and making the 1:1 water ratio even more accurate. Rinse not just once or twice, but at least 3 times, and until the water is clear - which it is not in the video.

Soaked rice first one hour and I think the rice absorbed too much water. I will not soak it next time.

What i hear from other shefs that soaking before rinsing is not good. Because all starches will come back to the rice. So first rince after soak❤

How do you prepare the sushi rice the morning before breakfast.. do you put it on auto cook the night before so that it cooks in the morning or did you put the rice and water in the instant pot the night before and in the morning turn it on?

My favourite rice brand so far has been Yumenishiki. I just looked up what variety of rice it is, and indeed - koshihikari. It is rather expensive, though. Might be time to look for other brands of similar rice.

Y'know, I was watching Kitchen Nightmares, and I saw you uploaded. Helen Rennie > Gordon Ramsay, tbh. Especially since I've had some pretty sad attempts at sushi rice previously. You've definitely got one of the top 3 cooking channels on KZbin as far as I'm concerned. I just wish I could pick your brain on basically every little detail of everything I cook, but I guess that's what your classes are for! One day. :)

just for clarification, all i have to do is click the rice button? Will it automatically know to go to 12 mins if I"m going with 1.5 cups rice? I dont need to move it to 12 mins?

Great tips, thank you. I'll have to see how well Swerve sweetener works in place of white sugar. If I make the rice for rolls or bowls, how to I store any leftover rice? I'm the only one who eats it. Oh and where do you buy your salmon? Can I use the Costco Wild Sockeye? I use this fish to ferment with spices, whey and salt water but haven't eaten it raw on rice.

I wouldn't eat wild sockeye raw. once you cure it, it might freeze ok, but left to its own devices is turns to mush after freezing, and without freezing it's a very serious parasite risk. If you are in the boston area, The New Deal Fish market in Cambridge or Captain Marden's in Wellesley have excellent farmed salmon. If you are looking for a national chain, they can be inconsistent, but Wegman's has EU organic salmon that's usually very good and works fine in raw dishes.

unfortunately sushi rice doesn't keep too well, but if you have to use leftovers, here is what I would do. Don't dress any rice that you are not going to eat right away. Cool rice to room temp and store covered in the fridge. To rewarm, cover it with a damp paper towel and put in a microwave until hot. serve as is or dress with the vinegar solution. the vinegar solution can be stored indefinitely. might be easier to make a batch and splash a bit on your rice each time you serve.

Thanks for the tips. Some videos tell you equal parts rice to water but I found that it wasn’t enough water. Plus I now know how to use the delay start button which I never used before.

I actually bought a high-end Japanese rice cooker but returned it after realizing that all the rice cookers have non-stick coating inner pots which is a big NO for me. I'll stick with the stainless steel Instapots. Plus, your rice came out very nice so that's all I need.

Another awesome video explained perfectly. I have the same IP, but will be in search of the specific ingredients. And I don't believe you can say this method works with ANY rice cooker. I have a cheap old Black+Decker Rice Cooker Plus that has 2 settings, on and keep warm. I would not make it in that as the bottom tends to get dry and sometimes a bit of brown. But as to the RAW SALMON, why on earth does anyone eat RAW salmon? What's the benefit?

QUESTION~!! The rice was great. I also made some "bacon" mushrooms, and avocado to go inside, but the sushi wrap went all gummy on me. Not sure what I did wrong. This is the first time I've ever done sushi. Is there a way to keep the wrap a little more crisp-ish?

The rice layer needs to be very thin and the roll should be rolled, sliced and eaten immediately. otherwise, the nori gets soggy.

Hello. I have rice cooker. And when i used 1 to 1 ratio rice came up not good at all. Was too dry. After i used 1 cup of rice and 1.20 of cup water. Rice was better. But still dry in the bottom. I could find even dry bit burned rice bums. After i tried 1 cup of rice and 1.5 of water. Still bit dry in the bottom but mushy on the top. 😢 I bought rice cooker because all people looks so happy and say it more then easy.but for me not. I cooked already 5 times and still not sure what is wrong. Please can you help?

It depends on how much rice you are cooking. 1 cup of rice is too small of an amount for most rice cookers (unless you have a tiny one). How easy is this pot to clean? I'm confident the insert is a breeze; what about the rest? A lot of kitchen gadgets are easy to use but a pain to clean. I have a old style pressure cooker that can be fully disassembled for cleaning, all the new ones I've been looking at have too many plastic parts (that don't come off).

insert is easy to clean. The lid just needs a rinse since it doesn't touch the food. I don't clean the outside of the pot.

I uses the product Bar Keeper's Friend powder to clean the Instant Pot stainless pot. You can see your reflection on the bottom the pot after cleaning.

Hello, I have the 6qt lux. The rice button says 10 minutes not 12. I just went with it and will see what happens. This is my first time making sticky rice. Will it be okay?

lux is a low end model without low pressure, so they do rice on high pressure for 10 min, which is way too long. try 5 min on high pressure with natural release

Does this work for Jasmine rice as well since its a 1:1 ratio? Can you make a video using Instant pot and showing Jasmine and Basmati rice?

My cooking procedure for jasmine and basmati are exactly the same as for sushi rice, but I skip the sushi vinegar.

Is there a reason you use low pressure for the rice? Every other rice recipe I've used successfully (not for sushi) uses high pressure.

whatever works :) the default rice setting on my instant pot is low pressure and I hear that's how rice cookers do it. since it works, I haven't messed around with high pressure.

@@helenrennie oh, gotcha. Yes, the default setting is low at 12 minutes, but most rice experiments I've seen say high pressure works better. I haven't specifically messed with sushi rice, but regular white basmati rice is 4 minutes on high with 10-12 minutes natural release.

I’ve used the high pressure setting for sushi rice and got poor results. For other rice absolutely use high pressure. However for sushi rice definitely do low pressure, I’ve tried it and it came out amazing! :)

I don't see why not :) 1.5 cups of rice, plus 1.5 cups of water is only 3 cups. The rice does expand some, but that would still be way less than 3 cups.
