The audience will have been told to do that by the warm up man before the show or in an interval. Same as (from experience) the Dancing On Ice audience are told when to stand up, when to make loads of noise, etc.

My friend and I at college both downloaded Let's Get Ready to Rhumble and I forced my Mum to give me and my friend updates on the song's position in the charts while we were at college! My mum was texting me and I was going "OK, it's at 20 at the moment..." and then later I was like "Hang on! NOW it's at 10!" and an hour later I was just like "Um... Vickie...? It's at number 2 in the charts. I think they're going to reach number 1..." and my friend was like "Nah... no they won't... right...?" and then a couple of hours later I was just sat there like "...They've done it. They're at number 1... Twitter is going insane - Ant and Dec are trending worldwide!"

When Lets Get Ready to Rhumble was released for the second time into the charts and got to Number 1, I was still at college and I made my mum update me on the position the song was in the chart throughout the day because me and my friend both watch Saturday Night Takeaway and wanted to know how it was getting on! So I was going "Ok, they're at no. 15 at the moment and they're still moving up." And then two minutes later, I was like "Ok, so this is strange. Now they're at no. 2." And then by the end of the day I was sat there going "I can't believe it. They've done it - they're at no. 1..."
