This is also the reason why they are fighting the way they are to test who is the best... every aspect of this fight is to test each other's proficiency in Wing Chun. The first part they used those poles to test each other in the 6 and a half point pole weapon skill, one fundamental aspect in Wing Chun. After that it was the butterfly knives, another aspect of Wing Chun. Then it is the hand to hand combat but even in the hand to hand combat, they were displaying proficiency, intermittently doing Chi Sao in the fight(a training aspect), the rapid fire chain punch(a technique) and even the counter-punch(don't know if this is an aspect of Wing Chun, but Cheung Tin-Chi was able to counter every punch from Ip Man's chain punch so beautifully that not one blow touched him so I suspect it is something that practitioners do learn to do. At the end of the fight, they even showed the Biu Jee(A finger Jab technique of Wing Chun) and of course the one inch punch(Made famous by Bruce Lee, but Wing Chun uses it and JKD took the technique.) So yeah, this was more than a mere fight to see who is stronger, it is specifically to see who had the better Wing Chun skills

The story behind the scene: (spoiler alert) Ip Man is fighting Chueng Tin-Chi to set straight who has a superior Wing Chun style. Tin-Chi challenged Ip to set the record straight and set up an event for this with people watching it, but Ip Man had his priorities straight and went to dancing lessons with his wife rather be in this event. As you saw, they eventually fought, but in private with no one getting in the way.
