I'm from Belgium and the dishes are extremely Belgian but the execution is sometimes a bit different, the stew is supposed to be a lot thicker (not soup) and the endives swim in a pool of cheesy bechamel sauce!

I'm from Belgium and my parents always used to make the endive (first dish) a bit sweeter by adding a tiny bit of sugar. Bitterness goes away and it tastes so good! You forgot the bechamel sauce in that dish btw.

The last waffle, I believe, is actually a Liége waffle, not a standard Belgian waffle, which is just a thicker American-style waffle. Liége are made with a yeast dough and pearl sugar. Yummmm

Endive is extremely bitter. A small amount in a salad is good. No amount of bacon and cheese can make it palatable.

We don't actually make it with endive, but chicory - the way you cook it helps making it less bitter. Also, we DROWN it in cheese - none of this "bits of cheese on top" crap. That helps.

There is 2 different kind of waffle in belgium, the thick ones are from Liège, the light ones are from Bruxelles, you can find both sorts in northern France. The carbonade is not suppose to be liquide like a soupe but to be a thick sauce

I grew up in a beach community, and had mussels all the time and I just love them I try to understand and respect other people's tastes, but I have just never understood how so many people so strongly dislike them I once got a plate of mussels, and a friend who had never had them tried them; he hated them so much he actually accused me of tricking him, while I was sitting there eating the rest (and it's not like I was going to spend money on a bad dish just to get someone to taste it)

Endives are my favorite vegetable as a Belgian, if too bitter, you can cut some of the base out before cooking, also don't forget to add a sugar cube during cooking. mmm. personally I forgo the cheese and ham and just stew them after cooking with some nutmeg, the best!

Carbonnade is mega! Ditto Liege waffles and rabbit stew. Was never far gone on Belgian fries though; cooking them in the goose fat makes them too crunchy...

I always just assumed Belgian waffles were an American bastardization of American waffles. So I did some research, and Belgian waffles actually originated in Belgium!

I was wondering why the light haired guy was looking to flushed... I think most of the video was after the blue waffle conversation and he was riddled guilt, anxiety, and excitement that the redhead and possibly thousands of viewers were going to go find that absolutely delightful holiday recipe.
