So, when I was working near the cheesecake factory, I got one day off a week and on that day I would get a single slice of their cheesecake to take home. My goal was to try every flavor on the dessert menu. I haven't gotten through them all but I will say that I have a few top picks. Mango Key lime. Reeses peanut butter (I can't help it, I'm a sucker for peanut butter) Very Cherry Ghiradeli You can't possibly eat a whole slice of that stuff without getting sick, so I would get a piece, take it home, it a few bits of it, and refrigerate the rest, taking it out in bits so that I never stuffed myself. a) they taste just fine refrigerated, b) you don't get sick, and c) the enjoyment lasts for a few days. I could make a single cheesecake slice last for 3-4 days and I never was unsatisfied

Nope. Hang around more chefs and bakers, or people that try to avoid franchise restaurants and the grocer frozen aisle ...crust is important. It's like great pizza, the toppings are there to flavor the bread, but great pizza starts with great bread. Tarts and pies aren't that different really, the crust brings it all together!

@Bobby Brady yeah - but that's kind of my point, I have lived on both the east coast and west coast, moved cross country twice growing up, and I have to say, arid heat is MUCH easier to deal with than humid heat. literal example, you can dump a bucket of water on your own head in an arid heat and feel a lot better, without much reprecussion aside from now being wet, in a humid heat, it just makes you feel sticky and gross.

The "biscuit" on the bottom (we call them cookies) isn't actually a cookie usually. Most of them have a crust made out of crushed Graham crackers. Of course, it depends on the flavor of the cheesecake itself on what the crust is made if but the majority of cheesecake flavors pair really well with the Graham cracker crust 😉

I used to work at the Cheesecake Factory & I don’t think they got to try some of the best ones. I think they need to come back & try the Pumpkin & Pumpkin Pecan Cheesecakes in the Fall. Born in and traveled over the U.S., never even considered the cheesecake to base ratio. I appreciate the base for it's structure and giving the cheesecake itself something to balance off of taste wise. Never did I think about the thickness or portion though. Even the bakers I know don't put as much emphasis as these guys did haha

People from the UK/Ireland don't understand FLAVOR(S) or food can also have different TEXTURES, too. Also, their idea of "what we all eat" is WAY off base + they don’t really understand Cheesecake Factory 🏭 as a bakery vs. just a restaurant. Apparently, they don’t understand having multiple flavors/versions on a menu. Their initial bafflement at "key lime" (sour) flavor seemed odd, too.

There was a series on PBS a few years ago, it was called the "science of taste" or something, but it said the reason people crave cheesecake is because it is about 50% fat and 50% sugar, which is the same make up as breast milk.

I wish they had been able to try the Mango Key Lime vs. Key Lime flavor. That's one of the few options at CCF where the base has a chewy, distinct flavor; it includes coconut. It's also one of the only slices at CCF that doesn't settle in the stomach like a bowling ball.

I'm American, and I'm always disappointed if the cheesecake doesn't have a substantial crust and it better not be thin and soggy. Some of the people in the comments seem to think it's supposed to be an inch thick or something. I've had it with pecan sandies for a nice thick crust, almost a half inch, and it was awesome. Glazed on the bottom with caramelized cookie and butter and nice and crumbly. I've never been to a Cheesecake Factory but, I don't know, one of those big slices and three fingers of Bourbon and I would be out for the count if it was dessert, maybe.

My mom used to bake delicious from scratch cherry or blueberry cheesecake pies with home made thick, crunchy crust. Yum! Sadly, cheesecakes from the bakery have pale flimsy crusts that makes one think it's under-baked..

I grew up in Orlando, but don’t live there now. I am always amused when people tell me they plan to visit there in the summer months because it is very hot and humid. Almost every afternoon it rains and one expects things to cool off, but it only gets seriously steamy.

Well to be fair, in Ireland, the summers would usually only get around on average 15-20 degrees Celcius or (58-68F). You'd be lucky to get one sunny day as the whole year is just drenched😂😂 We are planning on going to Orlando Florida Next Summer, honestly don't know what to expect.

RE: Key lime: they are not as tart as limes. You can eat them right off the tree (we have one) and they are not sour. They are great in pie, G&T and iced tea. The commercial juice makers pick the fruit green and it doesn't develop all its sugars. You are supposed to pick the limes when they show about 50% yellow, not all green like a Persian limes. Yes, we're in South Florida.

For all the Americans on about the low base to cake ratio that they're complaining about, I know what they're referring to. I'm American, living in Northern Ireland. In the States, it's like 5% crust and 95% cake. Over here, it's more like 20-30% crust and 70-80% cake. I personally prefer the American ratio (I eat cheesecake for the creaminess, the crust is just here to make sure you can get it out the pan after baking) so I stick to homemaker creamcakes versus the ones you buy in the shops (also the shop ones tend to be the gelatin kind, not the egg baked kind, which I learned I also don't like either, baked cheesecake has a more complex flavour).
