Looks good! We use actual potatoes for our potato candy. Mashed potatoes (without butter or any seasoning) and add enough powdered sugar until it gets doughy. Flatten out on a baking sheet, spread on a thin layer of peanut butter, and roll the whole thing up and chill it. Slice into little pinwheels and eat!

This has to be my favorite recipe you and Josh have done on the show. It’s less because I like potato candy (I really do, though) and more because I used to make it every Christmas with my grandmother. My Gran, who grew up dirt poor in southern Kentucky, loved potato candy because her mom had taught her how to make this treat of humble ingredients. Every holiday season, Gran and I would make wedding cookies, peanut butter blossoms, fudge, and, you guessed it, potato candy. She had a way of making it light as gnocchi, like little peanut butter pillows, so that they’d practically dissolve on your tongue. I’d take multiple tins of these goodies to dole out to my teachers at school before Christmas Break, and they would always remark on the potato candy. I’ve tried-and failed-many times to make it as she did, but I guess there’s just no substitute for a Gran. Thank you for doing this giveaway, and best to you both!
