I usually fry some onion (chopped small) and add to the mix. Adds a bit of flavor.

Well done lad, thanks for this, I just made some as a practice run for culture day tomorrow in the school here Costa Rica hope they like but sure who wouldn't 😅. I had an issue with water in the grated spud part, I made it the old way without mashed spuds, im thinking cheese cloth to squeeze out the water, on a time limit as it will turn on me 😅. Some info about Boxty; Some say that the name boxty derives from the Irish language name of arán bocht tí, with the literal meaning of poor house bread. Others say it comes from the word bacstaí - to bake. Its origin dates back to before the famine times. Boxty is an authentic Irish dish which originated in the 1700s. It was a staple food in Irish households where potatoes were relied upon to survive. slán go fóill ☘️🍀🇮🇪
