Your oven may not heat up to what you think it does. Get yourself an in-oven thermometer and test it. I've had similar problems, especially with older ovens.

I was about the comment nearly the same exact thing. The brioche pesto bois did look pretty good, if a little blonde/pale. I've also worked with older ovens where the first bake could be pretty solid but for the rest of the day it is off.

So with the Pikachu cupcakes, while mixing the batter u had ur stand mixer on too high speed (I noticed how the flour flew out causing an uneven and inaccurate batter) u also overfilled ur cupcake casings and they were supposed to fit inside a muffin/cupcake tin which is why they didn't bake properly, when u placed the frosting on the cupcakes and pressed them down onto the parchment paper, u suppose to chill them in the fridge for the frosting to firm up so that u can peel them off clean and ur oven might be too hot which is why ur cake browned so much and the inside was still raw, it also sunk because u took it out of the oven for too long before putting it back in.

I am suspicious of your oven. I highly suggest getting an oven thermometer to see what's going on with it. You did your best! The top of that cheesecake looked great: it wasn't cracked at all. I already own thia book but due to a major kitchen reno, I haven't had a chance to make anything from it, so good to know about the flavors being on point

This video is extra cool, I love the bit at the beginning and that you consistently try to work outside your comfort zone with your recipes. Also it's probably something with your oven if putting them in longer is still leaving them under-baked.

Get an oven thermometer, your oven may not be as hot as it should be! I've been baking as a hobby for a couple years and I had a similar mishap with an orange Bundt cake just yesterday. Also happy to see another Filipino :]

Oh man these look goood!! The ube (?) looks so much fun to use as well! The problem of the cakes not setting might be because of the oven itself. You could put a few pieces of bread in the oven to see where the problem lies (Oven might get hot at the sides, but not at the centre etc.) There are other possibilities as well, but all 3 recipes had some temperature related issues.

Love it, great job A few notes for future baking: Like the others in this comment section are saying, theres something odd with your oven, so the underbaked cakes are not your fault Another thing, your frosting. Its much easier to work with if its thicker, so hold back on the liquid next time, especially if youre dying it cause the colouring adds liquid too All your cakes still look great though, Id eat them happily

The cupcakes were probably down to the silicone molds without a metal pan to transfer heat. When I have seen silicone baking vessels used the cook time/temperature usually needs to be modified 😊

About the Pikachu Cupcakes ,I think if you smush them down to get them flat like the instructions said but then cooling it while still smushed you could probably peel off the baking paper carefully afterwards and actually get that smooth effect like you wanted ~

I see a few people mentioning you might want to check your oven temp, which I came here to say. But also those silicone cupcake liners dont transfer heat quite the same way as a pan would, so when I use mine they usually need a little extra time. And if your ovens heat is off that just makes it worse. Also i thought the pikachu face was cute!

Yeah, your oven is probably off. Even the bakes that went well didn't get a ton of color, it was just the most obvious with the cakes as they clearly collapsed from being checked so often before they had the heat to set up. Also, the cupcakes additionally suffered from the silicone cups, as they lost some residual heat they would normally get from the metal pan. For reference, if you bake the same batter in two different pans, but one is darker than the other, you'll see a difference in how the cupcakes bake-it's really that delicate! On the bright side: you got a crack-free cheesecake! That's awesome! Also major props for tackling the ube cake with how difficult it was! Ultra picky criticism: it looks like the frosting for the cake was a little overbeaten, and was starting to split. I was understandably concerned when you said the book told you to beat it for so long, and I think that was the result. If the frosting is smooth and holding it's shape without drooping when you pull the whisk out and flip it, you're done. Especially when you've got to color it after! It looks like you were super diligent about using room temperature ingredients though, which is awesome, keep that up, as cold butter in buttercream can also have an unfortunate split result.

your cakes might be collapsing because your oven disagrees with you about which rack is the middle one. I baked a cake a couple weeks ago, and the middle refused to set even after 15 minutes extra, turns out moving the pan one rack higher finished it in less than 10 minutes.

i skimmed over the comments and didnt see anyone mention so: the rolls! a good way to get the dough to 'seal' is to get it a little wet- just getting your fingers wet and running it along one of the edges. this makes the dough a little stickier so it will stick together better. not super important for that recipe b/c of the molds but might help in the future. they also look so good q.q im so hungry

Wish i could bake ube cakes, but i can't get hold of it in my country.😥 Every oven is different and the temperature can vary quite a bit even on the same settings. quirks you might say. If the results are too far of the mark you may need to use a thermometer and check that the temperature is where it is supposed to be Or the heat might be uneven, or oven is not as hot in the front as in the back.

I had a similar ube cake for my birthday last April. But leche flan is the middle layer instead of the cheesecake. It was so delicious, ube cakes are underrated.

The problem with the cupcakes could be that you used silicone muffin cups instead of a metal cupcake pan. The people who tested the recipe might never used silicone for baking to see the results. I have never used silicone for baking so I don't really know just a guess on my part

I had both the cooking and baking Pokemon books! I also had some cook books that might give you some recipes to make, first the " Ticket to Ride" based on board game that I got along with different versions. Second is the "Jurassic World", because I'm a dino fanatic since childhood. Both third and fourth books are related to the famous role play games " Dungeons and Dragons ", one is the Heroes feast (though I got it from the library) and the other is a sequel of a sort plus it involves the multiverse. Will you except the challenge? PS: I also got the " Wakanda cookbook ".

Either your oven needs fixing. If its old the diles can 'slip' and not go to the correct temps, or your doing it on purpose to make the recipes look bad.
