A few years ago I was passing through New Haven on my Harley. It was fathers day. I had just left my fathers side of the family in Oklahoma a few days before. I was missing him because he had passed many years ago. I ordered my pizza. It was a 90 minute wait. I went for a ride and returned. There was no room in the restaurant. I got my pizza and a good pop and went outside. As I sat on Wooster St on Fathers Day a homeless guy came by and asked for some money. I said no. But, I will share my pizza with you. I sat and talked to Willie as I ate the best pizza we have ever had. It was as my fathers was there. Thank you Franks and Willie for a great memory.

Sadly, Gary Bimonte passed away today. May he rest in peace. "It is with deep and profound sadness that we announce the passing of our brother, Gary Bimonte. Gary was a wonderful brother, son, uncle, and friend to so many, and he was loved by all of us. Gary was the pride and joy of the Pepe’s family, and there are no words to express the immense void that his passing has left in our hearts. He truly loved and cherished our family’s history, and he was so proud of the legacy that has carried through all these years. Gary was incredibly grateful for all of the happiness that our family brought to so many people through our love of pizza, and he really embodied the heritage and tradition that Frank Pepe Pizzeria Napoletana is known for today. He will be terribly missed by so many people. The family is requesting privacy during this time of grieving." -Frank Pepe's Website

I revisit this video from time to time. Frank, I'm a pizza guy, and a fairly decent pizza maker. I'm fourth generation Ellis Island New York born and raised. At 21, I ended up in Connecticut, and met my wife, a lovely Italian mutt like me. I'm now 41, and I had real difficulty making the adjustment and accepting the culture here. However, I found their Italian American culture so intriguing, and their pizza so unique that I was able to build a life here. It's pretty incredible to be able to appreciate both Pizza cultures with the same respect and admiration. As Ny'ers we were told that everything we did was better and to see the humbleness, humility, passion and respect you give the love for food inspires me; you are the true Italian spirit I remember from my childhood. So, thank you Frank

The clam pizza gets a lot of attention because it's a New Haven specialty, and it's done beautifully, no question. The garlic, the delicate balance of the flavors and textures, letting the quality of the no tomatoes and olive oil and the exquisite texture of the crust shine through - it's a knockout. But for me, the litmus test is the Margherita, and I think that Pepe's makes the best in the country, authentically Napolitano, but subtly tweaked with a rough hewn and natural but even distribution of ingredients, and most importantly, made with the anthracite coal fire: even flame, no smoke, just perfect. The crust is perfect: the right amount of chew and crisp. And call it sacrilegious, but I have it with bacon - it's perfectly unctuous and chewy and thin, and adds a bit of creamy, smoky, substantial protein - damn, it's just perfect. Even in the West Hartford location. Long live Pepe's! (P. S. I just had one last night - it's always perfect. What a glorious memory...)

@ctguitarguy Yes, but so is anything that is charred. Anything you cook that turns dark brown/black, even if its just a spec of the meal, is a carcinogen. But its a mostly wasted thought, because so many things are bad for you. You would think the tomato sauce on pizza is the healthiest part, but most pizza places used canned sauce, even the best pizza places used canned sauce from italy, and cans are lined with BPA or BPS or another BP product (they are all bad for you, just BPA is the famous one), and the tomatoes acidity breaks down the lining far quicker than most other canned goods, so the healthiest part of a pizza, is actually bad for you, but so is everything, you just have to have moderation and a mixed diet

As a professionally trained pizzaiolo and life-long Tri-Stater, (someone who has actually lived, worked, and studied in Westchester County, NY; New Haven County, CT; and Bergen County, NJ for over 95% of their life, not only just their childhood), I believe that all three states' pizza styles are equal in terms of taste and quality. Nothing compares to the kind of pizza that can be found anywhere in the Tri-State Area. It's not about N.Y. (Downstate State & City) vs Northern N.J. vs Gold Coast & Greater Haven, CT, and it never should be. We're more than a statistical region; we're all a family with a shared culture and what is objectively the best food in the world-Italian-American Pizza!!!!

As someone from CT (albeit not that part) I definitely agree with you and respect your opinion. I'm glad that there isn't a real competition (other than Tri-State vs. Chicago Deep Dish lol) I almost feel like the states should be aligned as Upstate NY, Tri-State (Northern NJ, NYC, and Gold Coast CT), and then the rest of CT and Rhode Island. Seems to be a better cultural alignment. lol

I’ve been to that peppes we were on a work trip I had never heard of the place or white clam pizza. A co-worker raves about it we went a couple hours out of the way for it and had to wait in a line that started outside to get a seat but the pizza and experience was worth it.

@@georgehoyle8797 the burgers are good, just different then what everyone is used to. The white bread (no bun) and no ketchup makes them unlike most burgers. But the meat though! Perfect mix of cuts go into it. Not just ground chuck. Like 20% sirloin. You can taste the difference.

@@georgehoyle8797 I'm a fan of Louis. It's the most basic burger ever, hasn't changed in 130 years. You eat it for the burger flavor, it's a unique 3 meat blend. If you want a burger that's fancier, Prime 16 is a couple blocks away and amazing.

Cory V in New York the slices are so big that they tend to fold them while eating them. That’s just probably how he’s accustomed to eating pizza to the point where it’s a subconscious thing.
