The West Coast doesn't have a set of pizza "rules" as strict as New York's, so their freedom to experiment with toppings and style translates into delicious and unique pizza. Italians still eat the peasant versions of their food. Pizza is still almost universally just a tomato base with a couple slices of fresh mozzarella and some basil leaves. It's nice, but it's insanely simple and gets old quick. I prefer the experimentation of the Americans when it come to Italian food. They took something good and made it better.

Arthur Have you even been to italy? While they do not make New York or Chicago style pizza for obvious reasons, you can get some simple and yet really good pizzas in most of Italy if you stay clear of the tourist traps

Well said, the best part of food and restaurant business is innovation, and u must innovate to stay relevant. Like look at the food scene today Giant over the top milkshakes, giant unconventional sandwiches, this is how restaurants build a brand, and build a client base. None of which would be possible without innovation. No one really looks for restaurants who make simple by the book dishes. The fad currently is over the top mom conventional dishes and that's the way it's been for years

I love this show! Speaking from and Italian and from Italy, among other things I love how convivial the pizza servings are in the US. We are used to a whole (medium size) pizza for the individual, instead it seems you guys serve a bigger pizza which is sliced and shared....I really like that

Prime Pizza is incredible. I got it often at the Fairfax location, then moved near the Burbank location. Probably the best pizza in LA. La Monica's in Westwood is a great NYC style place too.
