Kurma wasn't any morden turtle it was a giant. A huge monstrous turtle that lifted a whole mountain up in the ocean . Interestingly Hylonomus and Eunotosaurus were the first reptiles to move on earth 320-310 millions years ago ,and Eunotosaurus is the ancestors of turtles. We aren't claiming this on vague similarities. It pretty deep similarities.

In the day time of the Brahmā, the life prevails in this Brahmāṇḍā(Universe). The time-span of a Manu is called a Manvantra. So a Kalpa is divided into 14 Manvantras. At the end of each Manvantra an apocalyptic event occurs. A man from the that Manvantra is selected to be the Manu of the Next Manvantra. So this way the cycle of destruction and creation of life on earth goes on. So technically Manu is the carrier of life from the previous Manvantra to next or the man to be alive after the apocalypse or the first man alive in a Manvantra, not the first man to be born on Earth. And not only Manu, but his family also remains alive during the apocalypse. And Manu is not the only man who remains alive after the apocalypse. The Sapta Rishis(Seven sages) are also there, who make out through the apocalypse. The Sapta Rishi also are posts or titles, not particular men. So there are 14 different Sapta Rishis alongwith 14 Manus in a Kalpa, who carry the life and the knowledge of scriptures with them from previous Manvantra to next. Brahmins are believed to be the descendents of the Sapta Rishis. hence manu is not a human as you think
