I have witnessed my cholesterol go up and down (while being vegan) depending on things I was ingesting. I am proof that the drinking unfiltered coffee vs. filtered coffee issue is REAL. When I switched to French press coffee, my cholesterol jumped. It came back down when I filtered my coffee. (I am NOT EVER giving up caffeine again. I was off it for about 2 years back in 2000-2002 and life was horrid.) I also had my cholesterol jump when I was stupidly convinced that coconut oil was a "health food". I went back to olive oil, and my number dropped. BUT...as Rip Esselstyn recently said, you have to think about any oils as sugar compared to eating a piece of fruit. It's all unnatural and processed. My most recent blood tests came back great (although I almost have TOO MUCH B12 due to supplementation) but my cholesterol jumped to 160. Granted, most people at 54 with a non-medicated cholesterol of 160 would be thrilled, but it was the highest I've been in eons. I tried figuring out what was happening, and then realized...uh oh...I've been addicted to Country Crock Plant Butter. I was eating a lot of it. Yes, it's vegan, but it also has 5 grams of saturated fat per tablespoon and I'd eat numerous tablespoons at once. I will admit that I'm one of those people where if I eat super low fat, I have trouble feeling satiated. I end up over eating. It could be an issue where I just need to get used to the sensation of "full" on low fat. Interestingly, I learn a lot from watching animals...often, my cats. But, yesterday, I visited some horses here in Santa Fe. This one horse was voraciously eating green weeds. I looked at this all muscle, healthy horse that probably weighed 1,500 lbs. eating weeds and thought to myself, "Horses know what the right foods are. They don't need supplements and added olive oil with protein powders."

I'm someone who needs some fat in my diet as well, for satiation. I have norweigian and isish heritage, so maybe that's part of why (high cold water fish eaters). Also, in my opinion, these vegan, super low fat, no oil plant based leaders like Dr. Mcdougall do not look particularly, stunningly healthy or youthful for their age. They also don't seem to have particularly great energy or strength and have a slight slurring to their speech and sluggishness in their physical movement (not only Dr. Mcdougall, but Dr.s Esselstyn, Campbell, Klapper as well), while Dr. Fuhrman on the other hand who advocates eating seeds and nuts, and doesn't say one must be strictly vegan for good health, is much more youthful in appearance, brain and physical function. I've been following these folks for a long time (about 23 years) and have watched the collective progression. Love them all, but IMO, humans needs some healthy fats.

That's very interesting, thanks for sharing that. A few years ago I developed gallstones and was put on a very low fat, vegan diet (basically McDougall diet) to manage symptoms, it worked perfectly to manage symptoms and I got to my college weight. What surprised me was that after several months of eating this way I had borderline high cholesterol. The only thing I can think of is that I was drinking french press coffee every day. I then had my gallbladder removed (even though I didn't have symptoms anymore, my surgeon said my gallbladder was inflamed and he was a bit worried about it) I was able to eat a little nuts and seeds again and my cholesterol dropped a little.

I believe fruits are optimum but I still love McDougall. His advice is so much better than even most other raw vegan/ vegan proponents out there. He's right for the most part!!!

Thank you Chef AJ for asking all the questions on DHA, fat, brain health, chia nuts etc. All these topics keep coming up and I couldn’t get an answer about them that seemed to be something concrete to hang on to . I would love to come out and do a 10 day program but it’s not financially feasible right now. Still very new to this ‘starch’ not being the enemy and haven’t stopped counting calories on chronometer. Just so scary to me I don’t want gain my weight back! Lost over 100# and don’t ever want them back! I have started eating starches now though with each meal which I avoided like the plague before. I had to make changes was on 837 kcal per day, now up to 1357 per day. Have too low white blood count & red cells are misshaped? Something like that. White cell is up to 3.2 from 2.7 so that’s good and last test revealed b12, iron & vit. d fine. I am deficient in copper so now supplementing and hope it helps! Please keep up the wonderful shows and seeing everything I can from the McDougalls is so enlightening!!!❤️ God bless you Chef AJ!

I'm glad you said that about hypoglycemia, Dr. McDougall. I've had reactive hypoglycemia since I was young. I do find, generally, I don't do well with a lot of fruit. People keep telling me I should eat more fruit but I know I can't.

hi Chef AJ i asked Dr Esselstyn once about the 1-2 tablespoons of ground flax & chia... bc he mentions it in his books....he told me to just have it if i was worried about my omegas ..bc with a minimum 9f 6 handfuls of cooked greens a day, id be getting plenty of omegas there too

Love Dr. McDougall, Mary and Chef AJ. You all look fabulous. There are some very interesting fat experiments that The Fruit Doctor conducted on herself eating primarily greens and getting her fats from these greens (mostly romaine lettuce because she does not like the taste of dark greens). It's been a year of two since I watched her KZbin videos, but she said the greens have a good mixture of the omega fats. That's why elephants never forget!

While I do not want to be as thin as Dr and Mary McDougall and Chef AJ, I have seen photos of successful McDougaller’s who are not as thin … and following the 12 day program from one of Dr McDougall’s books, that’s when I was able to lose more weight easily. My problem is once I taste the SAD food, it’s difficult for me to get back on track. I really enjoy these programs with Dr and Mary McDougall. They’re the best! So are you Chef AJ, for running these KZbin interviews. I’ve learned so much from them. Thank you!!

Chef AJ thank you for another educational program with the McDougalls. Love how they want us all just to keep everything simple. With another friend I completed a Mary's mini and then followed with a 7 day potatoes only with Andrew Taylor. Another who just asks us to keep everything simple. No need to "over think" or complicate our food intake.

My grandparents lived on a very high fat diet (their own fat bacon etc etc) but were not obese. However they worked very hard physically all day every day thus burning off the calories. Were they healthy on this diet ? I would say no. They died of cancer in their early 60s. I used to love meat as fat & greasy as it came but since eating WFPB I have lost weight, exercise regularly & feel marvellous. Education (by the McDougalls, Chef AJ etc) is wonderful & essential 👍

It doesn't really sit well with me that his answer to my question about fats and satiety is "some people are just so used to eating fat that they feel like they still need it." Maybe that's true, but is that ever going to change? What do I do if I eat MORE calories WITHOUT fat? I tried being no overt fats for 8 months and I felt like I was going crazy and that something was wrong with me because I would just keep eating and eating and eating and never reached the "full and satisfied" mark, only "still not satiated -> oops now stuffed and in pain". Why would this just be written off as insignificant? I talk to so many women who feel more satiated with a few small servings of fat per day and with eating 15-20% of fat rather than 5%. Maybe I should wean myself down from 20% fat back to 5%? Maybe my starches (mostly potatoes were) too calorically dilute?

Lisa Eve I personally don’t think overt fat is ESSENTIAL and not everyone loses their period and stuff on no overt fats, but I think there are a lot of individual difference that McDougall doesn’t talk about. Lots of you tubers I follow feel satisfied having no added fats, but some thrive with more fats. There is so much variety in whole plant foods and there’s a lot of variety in how people can make a whole plant food diet to be the most satiated. I think it’s unfortunate that Dr. McDougall is so closed minded. He does work with a lot of older people who may not have a female hormonal component though.

Dr. Terry Shintani explained on The Truth About Weight Loss Summit that fat is actually the least satiating of the 3 macronutrients but that it's perceived as more satiating because it's more than double in caloric density. You only have to eat an ounce of fat to get 200 calories but would have to eat 2 pounds of vegetables, a pound of fruit, a pound of winter squashes or 3/4 a pound of potatoes to get the same amount of calories. Most people who try to go low fat, whether cooked or rae vegan do not eat a large enough volume of food. Truing eating higher fat starches like oats which are almost 20% fat. He didn't say you couldn't eat fat, just that it's not necessary for survival.

If I understood Dr. Gregor in a lecture on You Tube, I thought he pointed to a study about omega-3s and brain shrinkage. Can Dr McDougall comment on any study?

So, if Dr. McDougal's patients absorbed fat through the safflower oil put on their skin, doesn't that mean that I may be absorbing fat into my body transdermally if I use oils such as coconut or olive or almond oil to moisturize my skin? In other words, am I impeding whatever progress I am making internally, with a low/no fat diet, by putting oils on my skin externally? Also, where does Castor Oil fit in to all of this?

Love the guy. Great diet advice. Still sharp as a knife with his insights. Not sure why his number's game is off. Human breast milk isn't 50% fat (4.5%), Oatmeal isn't 16% fat (4%), Corn isn't 12% fat, etc. Also sad how the "Karen's" are inhibiting his freedom of speech. Everything is a "conspiracy theory". :-) Sign of the times.

Good interview. Now re: fats, I thought @chefaj uses the JOI nut butters at times ( to make milks, etc). No problem with it- I use it also… but it IS A FAT. Which I don't have a problem with. But I thought she said she doesn’t consume fats. Thats a bit confusing. Although I was in/ out listening while working

Dr. McDougall has a virtual course. Amazing. If you can't afford it get his book The Starch Solution or Chef AJs books. AJ also has an amazing affordable course. You have to choose it. I am in the same boat and it is just a day at a time. Moving through and out of sugar addiction. You can do it!

Thanks for all of you! I was eating a high starch & vegetable whole food plant based diet up until September 2020. I had an emergency full small bowel obstruction surgery, caused by adhesions from previous surgeries 31 years ago. Now I'm told, I have to stay on a low fiber (7grams a day) diet. No leafy greens, sweet potatoes, most vegetables or fruits. I can probably eat 2 peeled white potatoes & white rice. How can I eat healthy when I can no longer eat my high fiber plant-based diet? What can I eat to stay in a healthy place? Do you have any suggestions or resources to get me back on track. I am desperately struggling every day. I appreciate any suggestions. Thank you! Thank you!

@truelove I have had major hair loss/thinning since going vegan in Oct. 1994. (I had to quit being vegan from late Nov. 2010 to the fall of 2013 when my endocrine system blew.) My blood tests, including protein levels, are good, so I can't figure out what is wrong. @Liming Dr. McDougall told me years ago that he does eat some nuts since he's slim and doesn't have heart issues. My current issue is osteoporosis despite many years of exercising and taking calcium...sigh. -- I have to say that John and Mary's coloring is excellent today. I tend to go by that with people. :-)

Your gut bacteria is off . You are not absorbing your nutrients. Calcium supplements are dangerous. Are you aware Calcium supplements are outlawed in Europe?

I agree that whole food plant based is the healthy course but I cannot discount the blue zone studies where the people live the longest and do eat fish, oil and small occasional amounts of meat.

I was interested up until the “she would be beautiful if she just lost weight” …I’m out! I suffer on a daily basis trying to fight my food addiction and am trying to transition to a HCLF plant-based way of life. It’s not like I don’t want to but those comments don’t help at all 😞💔
