I recently ordered a jar from Amazon. Finally got around to using it on brisket and everybody was very impressed. Great flavor and amazing bark. I smoked the brisket for about 10 hours, wrapped with some Wagyu tallow and placed in my sous vide cooler for a little over 20 hours. Without a doubt the best brisket I have ever cooked, thanks for sharing your knowledge and experiences.

Congrats on expanding your BBQ side hustle with the rub! As a long time subscriber I've always appreciated the lengths you go to in testing, experimenting and refining your techniques. As our taste in what makes a "perfect" brisket varies, we all have the love of smoked meats as our common unifier, so kudos for the time and effort you spend tending your pits and doing videos in your garage for our benefit! (and hopefully your benefit too as we like, subscribe, comment to monetize your channel - and now buy your rub - for which I've ordered today). On a somewhat related note, what are your thoughts on pre-ground pepper vs fresh ground pepper? So many chefs and foodies say to always use fresh ground pepper when cooking as much of the flavor compounds dissipate once ground - perhaps that only applies to peppering food that you are about to eat, vs something like a brisket that has a 12+ hour cook and as long of a hold?

Congratulations Steve. You have gone real deep into developing this. Texture, flavor, umami and all. It sounds amazing but I am sold on the grilled meat flavoring alone. My favorite way to enjoy brisket slices is when I reheat them over a grill. I'd love to have that flavor in a rub. Can't wait to give it a try.

Hey Steve! I got some of your seasoning but haven’t tried it yet… Wanted to ask you… for seasoning your brisket what’s the best seasoning combination that you’ve done so far? Steve, I love your videos. You have definitely helped me improve my brisket game. I have taken what you teach on offsets and have adapted it to cooking on a weber kettle, and I have got really great results! I am definitely buying a jar of this rub. I can't wait to try it out! I was pleased to see that there is no rice flower in your rub. My son has a food sensitivity to rice, so I have to be real careful with reading the ingredients on everything, because it shows up in the strangest places, including many rubs for some reason.

It doesn't contain rice ingredients to my knowledge but the facility processes rice ingredients so there's always the risk of trace amounts.

The old school lockhart guys probably just use salt and pepper but i can garuntee you 100% all the "craft barbecue" people are definitely using special blends no matter what they tell people. Franklins definitely uses lawrys and golden sauce

Oh for sure I'm aware very few are just using straight S&P anymore. I've heard lawry's and fiesta seasoning are popular additions. Good to hear from another source that Franklins is using golden mountain. I did a video on it but I had no idea what he was using it for if anything.

I'm old school. Course kosher salt and course black pepper. So simple you can make it at home. But sometimes I put some tears in the brisket and push in some garlic cloves.

I love your channel. It’s very informative and it really does represent your name. I just bought a couple of bottles haven’t tried them yet but if I could recommend one more ingredient I would suggest ancho chili. I have a brisket rub in my pantry called dirty dalmation and it’s always a hit.

Hey, I bought your rub and I have never made a Brisket before. I am preparing my self to smoke maybe next week. Question, do you recomend to smoke the brisket as soon as I put the rub or do you recomend to dry brine in the fridge for a couple of hours before smoking?

@@SmokeTrailsBBQ well, my first time doing it and it was good, not great. Taste wise was really good and juicy. I can say your rub is really forgiving. I remember O saw one of your videos and you pointed out that we can go heavy with it and you are 100% correct. It was really juicy but for some reason the point was a little tough underneath. I didn’t hold it in the oven, I just waited to 140 degrees and cut it. For sure I will try again soon, but your rub man, really really good.

So if you were going to do an overnight brine, would you just do a light salt brine and season before the cook or just use your blend on overnight?

Just got the rub this weekend, and did a brisket overnight Sunday. I really like the rub, but for my personal tastes I prefer a bit more salt. I think for my next attempt I'll try a dusting of Lowry's, then a heavy dose of your rub. Should be perfect. Well done on the rub though, it is a great blend, I can see and appreciate the effort you put into it! Keep up the great work!

The best I've had is from Fire And Smoke Society,its their "black and tan" rub..It gives thee best bark ever..I usually use a bit of 16 mesh black pepper along with it

Definitely getting some rub. I want to do a little comparison between this and Franklins (with salt and pepper added). One question: What made you move away from the butcher paper wrap inside a foil pan with water for the extended hold?

Just wanted to update as others might be curious. I did two choice briskets on my pellet grill (one was admittedly a better cut ie survived the cook better) Franklin’s vs Smoke trails BBQ rub both had the same treatment. 12 hours on low then bumped to 275-300 for 5 hours or till 190 followed by a tallow/ghee wrap and long hold at 160. Smoke trails wins this comparison, very very tasty. I’ll have to try franklins again since it didn’t get a great cut

So awesome!! Congrats on this. Can't wait to get my grubby hands on some! I would love to see a video where you trim out a lot of the seam in the point and meat glued 'em back together. Thoughts on this?

I've thought about it before as a fun entertaining experiment. I think it could work to get rid of the seam fat but the applications for a typical backyard cook are dubious. Could be a fun vid though

For the heavy coat of rub, would you know how many ounces of rub that was? I salt brine my brisket heavy at 1.5%. Obviously in my case, I need to add salt, or pre-brine with additional salt ahead of time. I can calculate how much to add if I figure out the amount of rub that is used on the average. Does around 3 Oz of rub make sense?

Around .75 to 1% salt by weight after using about 1/3 a bottle. So if you want to get up to 1.5% I'd first add a layer of between 2-4 tablespoons of kosher salt.

Had a bunch of family over recently and exclusively used your rub. Got very positive feedback from every single person. The salt vs pepper ratio is absolutely perfect. It's possible though rare. Most people get headaches because they just consumed a crapload of salt in whatever they ate and it just so happens to have MSG in it so that's what they blame.

I love your videos and no doubt will be buying your products in the future. My only concern is the sodium amount. I went on Amazon and looked at the amount. Would you ever consider making a low sodium version? I’d be all over that. Briskets look great btw!

I thought everyone had disodium inosinate and guanylate in their cabinets at home. They don't?.......jokes aside, I have lots of uncommon spices and seasonings, but not those. Have you ever considered adding something like xanthan gum to a rub? I have a theory that it could potentially aid in the formation of bark by creating a sort of artificial pellicle, but that is such a potent ingredient, it could quickly create a mess if overdone. I'm happy that you took the plunge on this. I hope it really takes off.

Haha! I've used corn starch and it just created a big mess. Absorbs too much liquid. I think xanthum would just make it slimy

@SmokeTrailsBBQ it might. I occasionally use it at competitions when my au jus needs a little extra viscosity, but it is unreal how little it takes to do the job. The benefit that it has over starches is that it barely changes consistency with temperature. If it is liquid when it is warm, then it will still be liquid in the box once it cools off, but it takes only the slightest dusting to make a noticeable difference. Its a wild ingredient.

I never buy rubs because I prefer to make my own but I'm going to try this one. BTW I'm always impressed by how your briskets look like meteorites with such perfect crust

Seems like a really cool interesting combo of flavors. Personally, I have never cooked with only salt and pepper. Most commonly I use Harry Soo’s Lonestar brisket rub which has some Umami components but not enough to engage my MSG allergy. I wish I could try yours. 😢

I'm alright with MSG because it's in so many things but the other MSG complementing chemicals are more concerning because I'm not used to them. It might be irrational but it's kinda turning me off trying the rub 😬

The ingredients could be less damaging on the body. Why not replace sunflower oil and soybean oil with olive oil, or refined coconut oil anything more healthy may cost a slightly more amount. Why are disodium inosinate and disodium guanylate added( flavor enhancers ) if MSG is already added.
