I was in such a gloomy mood the day before my birthday. The weather was unpleasant, the deadlines were coming closer and closer... BUT! I came home and made this cake and IT. IS. GREAT. I imagine you could, but it would alter the taste. I've tried swapping golden syrup for honey a few times before, and the resulting flavour has been hit and miss. If you're a fan of honey though and don't mind it combined with chocolate, it sounds like a viable substitute.
