The big man did himself proud. I did a couple a phal's back in the late 90's and I'd never do it again. I went up to see me bestie up in Stoke as he was at uni. We went out on the lash and ended up in some iffy curry place. The server said do you want it hot and of course my mate gave it large. We got back to his gaff and it was nuclear! I had three mouthfuls and had the put the plate away. My mate pretty much did the same. HIs always skint roommate came down and asked if he could have it. We both said go right ahead. The following day we were on the lash again when I got the grumbles. I had to go into this cold, skanky loo to drop trough. Not the best of weekends. From that day on I said no more than a vindaloo. I usually order a jalfrezi

I have a similar story about a phaal. I genuinely think it's the oil that gets you more than the heat. They use so much oil to cook out the spices that it acts like a laxative. If it wasn't for that it still would have been bad, but at least it would have some time to digest.

4:04 If you use regular butter rather than ghee. I melt the butter, separate the clear yellow butter oil from the white milk solids and use the clear yellow butter oil at the start when you are frying ingredients. Later on, I add the milk solids for flavour, as the milk solids tend to burn if you fry them. Just my personal opinion as an enthusiastic, amateur home cook. I welcome other opinions and advice.

I love your videos, Al and you've taught me, so much. I've been desperate for years, to learn how to do Chicken Tikka Masala restaurant style and I found yours, followed your recipe and my family, who are really fussy about Indian takeaways, said that mine was tastier than any Indian restaurant, that they had been to and they've been to hundreds! So, thank you, thank you, thank you, Al! xxx
