There's the mark of a craftsman. Notice how when he made the bridal joints he hammered the wood a bit so that it would fit tight and gap free after the wood rebounded. I've seen him use this method many times before, but these joints are completely hidden and will only be seen by the next person who refinishes it. Gotta love it!

Lovely as always. Side note: You usually put a thin layer of cotton batting between foam and fabric. Otherwise movement from sitting will damage the foam over time and it's better for working the fabric.

Lovely to watch. Those are obviously quite old chairs, judging from the upholstery materials, European Empire style I think. Are they Japanese-made? I just completed a very similar job, would have been very helpful to see this first!
