There was a fried chicken place that baked the seasoned chicken first then let it cool down and then proceeded to bread and fry it and it was fall off the bone tender, maybe this would be a great idea when frying with the whey.

Oh and what do you think of baking first and then frying? Would it still between to fast?

That may work. I am going to do this again only I will try at the lower temperature. I knew before I started frying that the oil was too hot (that little propane burner cools way hot). I need to dig out my thermometer and keep an eye on the oil.

I do use , but the one time I tried making a batter with it I wasn't happy. It didn't stay on the fish.
