It said that if he did everything it asked he would consider letting him go. First it gave something easy that he would do with no issue which resulted in him killing the only one who knew how to stop the creature. Then it gave him a task he knew the guy didn’t want to do : killing someone. The last task of killing the wife was impossible for him to complete. I’m pretty sure the creature knew he wouldn’t do it. This he would never have to consider letting him go as promised and it could keep him as a slave.
