White rice - 2 cups soaked for 2 hours
Eggs - 2
Curd - 3 tbsp
Onion - 1
Ginger - a mesium piece
Curry leaves
Green chilli
Wheat flour - 3 tbsp
Salt - as per taste
Baking soda - ¼ tsp
Oil
To make this delicious soft snack appams, first wash 2 cups of white rice until clean and socket in normal water for around two hours or until soft.
Once the rice has turned soft, transfer it into a large jar of a mixer grinder and break two eggs into it. Next, add three tablespoons of curd and grind it well to get a fine paste.
You need not completely drain the water after soaking the rice.
Once the paste is ready, add 3 tablespoons of wheat flour and blend again so that the wheat flour is evenly distributed throughout the batter.
The consistency of the batter should neither be too thick, nor too thin.
When is the batter is ready, transfer it into a large mixing bowl and add one small finely chopped onion, a few green chilies, finely chopped as per your taste, A medium piece of ginger, finely chopped and a few chopped curry leaves.
Give it all a good mix and season it with some salt and add a quarter teaspoon of baking soda and give everything a good mix until well combined.
Once the batter is ready, you can readily make the snack and you need not rest the batter.
To prepare the snack, heat a small pan and add some oil into it.. once the oil heats up, add two ladles of the batter and let it cook on one side with a lid closing the pan.
once the door looks cooked on the top and has turned golden from the bottom, slip and cook on the other side until golden brown.
Do not flip the snack unless it has turned golden from the bottom and cooked from the top.
Once a cooked and golden on both the sides, transfer it into a serving plate and serve!!
