📋 INGREDIENTS:
Vegan meatballs:
• 300g cooked chickpeas (1 ¾ cups)
• 1/2 red onion
• Juice of 1 lime
• 1/2 tsp chili flakes
• 1/4 red bell pepper
• 1/4 green bell pepper
• 1/4 yellow bell pepper
• 3 stalks spring onions.
• 100g (2/3 cup) corn
• 4-6 tbsp flour
• Vegetable oil for frying
• Salt (to taste)
• Black pepper (to taste)
Dipping:
• 2 garlic cloves
• Salt (to taste)
• Black pepper (to taste)
• Juice of 1/2 lemon
• 300g vegan yogurt (1 1/4 cups)
• 100g vegan feta cheese (2/3 cup, crumbled)
• 1 handful of fresh herbs like basil, chives, parsley or dill
Salad:
• Mixed salad
• 1/4 red bell pepper
• 1/4 green bell pepper
• 1/4 yellow bell pepper
• 1/2 red onion
• Spring onions (to taste)
• Cucumber
• Tomato
