Just add coconut milk to the red lentils! Incredibly delicious recipe! In this video I show you how you can easily prepare a delicious and vegan lentil curry with peppers. An absolute favorite in our home. The recipe is easy to prepare and super tasty. A delicious and very easy dinner recipe.

📋 INGREDIENTS:
250 g red lentils (1 cup)
1 medium onion
2 cloves of garlic
1 tsp ginger paste
1 teaspoon curry paste
1 can of coconut milk
1 cube of homemade vegetable broth 👉 • Selbstgemachte Gemüseb...
400 ml water (1 3/4 cups)
Lime juice
1 bunch of coriander
2 tsp salt
black pepper
1 red pepper
olive oil
Rice to serve

More tips:
You can refine the curry with other ingredients depending on your taste, e.g. B. with carrots, sweet potatoes or tomatoes.
Instead of rice, you can also serve naan bread or chapati with the curry.

This was basically my lunch today! But I use tomatoes instead of peppers, and I add ginger in with the garlic in the beginning, bay leaves and a stick of cinnamon during, and fresh coriander and juice of a whole lime in the end.

Coconut milk is also great to cook your rice in - about 60% coconut milk and 40% water. The coconut milk is absorbed into the rice giving it a subtle, not overpowering, flavor.

I read a doctors page saying coconut oil will give you very high cholesterol, is this true? Also is there any difference between coconut oil for cooking and coconut oil for cosmetic use?
