As an Italian, born and raised in Italy with the many and delicious recipes that my Nonna used to prepare for me, watching this video recipe is painful and disappointing!
I'm sorry to say this, because I'm sure the final result is good, but unfortunately this recipe cannot be defined as Italian. Italian food is much, much simpler than that!

My taste buds work, so no. Stroke, heart disease etc aren't for me. I can't eat pizza if I'm dead, that's a deal breaker.

I use very little salt. Even ready salted crisps are too salty for me. I get saltiness for things like Pecorino like you mentioned. The amount of salt they used in this sauce there is no more salt left in the sea, it's all in the sauce.

Marcella Hazan wrote several tomato sauce recipes in her book, including the very simple classic ones. However the one with butter in it (I think she called it tomato sauce #3) is the one everyone remembers because it was so unusual! The story told about the butter recipe it is that in the town she grew up in (Cesenatico - a town in Romagna) her mother used to cook onions in butter to make a tomato sauce. Later when she wrote her cookbook she took the ideas from her mother's recipe to create a brand-new recipe where the butter was added separately and cooked down slowly.

​​@@vincenzosplateI agree you should show classic recipe to show the culture and whats more original and traditional to keep it alive. Something I wonder for example you mention sometimes to say permigianno instead of parmesan. Permigianno is in Italian for the dop product and parmesan is the English word for whatever is not produced according to Italian standards so what's wrong with calling things for what they are. English speaking people don't use Italian words they use English words. Same goes for pomodoro, it means tomatoes, so I can make a spaghetti with tomatoes and call it spaghetti pomodoro so what.. pomodoro which simply means tomatoes has no standard attached to it people can use the term and make whatever tomato sauce they want. I am not sure if sometimes you consider the translation or things for what they are. Of course the rookies won't know that pomodoro is a specific sauce in Italy but then again I am pretty sure all over Italy they do different stuff since it just means tomato. That's way too much salt 😂

I almost cried, i absolutely saw me and my grandma, that passed away recently, telling me how to cook czech food and how to general. I definetly am going to respect her in my future days and do the same way she did. To keep her legacy,

And you're 101% right there is WAYYYYY too much salt in our American diet ... There are also way too many KZbin Cooks trying to be the Next Famous Chef who don't know shit about shit. Please stay true! I am English American, lived only in the US. In my 20s I began cooking most meals from scratch. When I made (and make) my "spaghetti sauce" I would shred carrots in it to hide from my children. (Just to add more vit c and because I love carrots). It's wasn't until I found you that I realized I'd been making sofrito! A very happy note in my book. Thank you for being true....Much love!

They were a little intense to watch if you actually wanted to learn a recipe. I agree 💯 about too much salt. (And sugar for that matter). I recently was at a retreat. The food served was already drowning in extra salt/sugar and I watched other people reach for the salt shaker. 😮 Vincenzo, your sauce recipe is the best. Blending the soffitto first has been a game changer for me. We just love it so much. 😋 Yes, keep sharing your recipes. I can’t wait for your book to come out. Grazie! 💕

My son introduced me to your KZbin channel. I absolutely love your passion for traditional Italian food. The added bonus is you make me laugh. Yes, we all may have our own take on sauces/gravy and it may taste fabulous. But it's not traditional Italian. I think with all of these professional chefs putting out videos and recipes they have forgotten that the most beautiful food is simplistic (and does not require a ton of salt!) Just watching the amount of salt they added collectively made my blood pressure rise. I am looking forward to your book. Ill be purchasing two copies. One for me and one for my son, Salvatore. Keep being authentic.

Hazan's recipe is much simpler (just butter, onion cut in half, and whole peeled tomatoes that you crush while cooking), and it does actually work pretty well. Also, she never claimed it was either pomodoro or classic! I'm not really sure what this is...

I salt my carrots, onions, and celery when I start sweeting them down and then I may add some(not nearly as much as they did) 15-20 minutes into the sauce cooking. They do at least start by saying Chicago style, but they should have that written in the description too.

I love how you promote the classic recipes. It's fine if people give their own twist to things but cook the real classic at least once, to know where it all came from. I went out of my way to get guanciale for my carbonara just because you said it made the dish sing. I didn't think it would make that much difference honestly, but it did! Everyone loved it! Will I be using it every time? No. During our last camping vacation I even made an easy "carbonara" with bacon, peas and a jar of sauce, which tasted better than I thought it would actually. But I'm sure happy to know how it's supposed to taste, and I will go back to that regularly. Thank you for keeping the tradition alive!

They did not use Marcella hazans recipe (called, Tomato Sauce with Garlic and Basil) is with tomatoes, basil, garlic, salt, extra virgin olive oil.

Italian American cuisine is a mixed bag because they came together from all parts of Italy. You will never find butter in a classic sauce from Roma or Napoli or Bologna but maybe the family recipe is influenced by somewhere in the North, like Lombardy, where the climate is cooler and they are close to France so butter is a more normal ingredient.

Vincenzo, I love your content and I’ve watched hundreds of your videos. You’ve inspired me to cook more Italian cuisine and do it authentically. I agree with you on the salt, should have used soffrito at the beginning. Now I know the French love butter in their food and Italians prefer extra virgin olive oil. However I want you to think about this for a moment. What are the French known for? Pastries, yes obviously. But also their sauces specifically a pan sauce. They typically add a few knobs of butter just before serving a sauce to add a silkiness and luxurious feel to the sauce. Makes it shine. Think bolognese ragu with a bit of milk at the end, it does add something and it can cut through the acidity. Now, adding butter at the end may hinder the sauce and pasta from combining, but overall I think it could add a little something to a pomodoro or a vodka sauce. Frying the onions in butter should just be for chili and caramelized onions which the soffrito with the carrot would have no need to add butter at the beginning.😊 I hope to hear back what you think!

I love that while watching, Vincenzo is as confused as Matty is lol. So funny to watch. I know Marcella dumbed down her recipes for home cooks so eh. It's whatever, lol. Your reaction was pretty funny to the version. Also, to be fair, as a butter fan - I agree with her use :s haha.

When I went to culinary school in the late 80s, all of my instructors were from Europe. The amount of salt they used in soups, sauces, gravies, etc. was insane. I actually lost points on my dishes because they said it wasn't salty enough. Personally I prefer herbs, and just a bit of salt. Carrots, celery and onions is the foundation for so many things. As for this spaghetti sauce, well, it's a step up from Jack.

When will your book be available. I've been downloading ur videos, but to have an entire cookbook in one place with photos of the beautiful dishes, I can't wait. Yes I love your sugo recipe better (BTW my friends make fun of me when i say sugo-non italians lol). None of my relatives ever put butter, gross. So much salt in America's cooking. I hate it when people just put salt on their food even b4 tasting the dish. The salt shaker has never been on my table. Your going to ruin my dish, you get up and get it from the spice rack. So happy for your success and can't wait for your cookbook.

A good pomodoro sauce is silky. Not too chunky, not watery, not thick as tomato puree... but SILKY. Smooth - because of correct cooking timing. Not because of butter. And I'm so careful when cooking my pomodoro that I add a whole garlic but remove it once a *hint* of garlic aroma kicks in. Nothing should overpower the sofrito flavors! That, coming from a non-Italian, me!

I’m even confused about the “soffritto” for a simple salsa di pomodoro. As my nonna taught me, it’s whole peeled tomato (fresh is better, or cans), garlic to taste, salt, plenty of basil. She used to add the olive oil at the end, once the salsa was cooked. That was it. Nothing tastes like her salsa. I miss it so much.

Vincenzo, here in Argentina (where 70% of its population has an Italian ancestor, mostly Neapolitan) a lot of people add some peperoncino chili to the pasta tomato sauce. Is it some regional thing?

At least they didn't put some extra virgin olive oil in the pasta water 😂😂 but yes keep the tradition alive ! As a certified cook (studied at culinary school) i like to make my recipes BUT when it Comes to traditional recipes WHY do people screw it like those guys seriously? What I love to do in pasta Al pomodoro is using fresh yellow tomatoes for the sauce it's amazing but all the other ingredients remain the same and are cooked the proper italian way. Vincenzo, my German mother used soffritto, onion, carrot and celery, in many dishes that weren't Italian. I learned at a very young age how the Holy Trinity added so much flavor. When done properly, I might add. This video had a "Frankenstein" version. Perhaps it's a Chicago thing, and perhaps it is good, but it definitely is not a true soffritto as there were no carrots or celery, and a whole lot of garlic with tomato paste, and way too much salt. I completely agree with you that tradition is important. This is why Gramma/Nonna always made the BEST food, because it was tradition. Keep up the good work!

Just watching the obsene amount of salt used in this recipe is causing my blood pressure to rise. Imagine what a bite could do to me. I will get swollen 😂. And no Vincenzo, don't sugar-coat it, there is nothing redeemable about that mappazzone, oops, I meant sauce. I have personally eaten Chicago style deep dish pizza and even they are careful with the salt.

Pasta is so much harder than you think. Cooking times are good and all, but water mineral composition can severely affect texture of the pasta. I can't cook Rummo pasta at my home (soft-medium water), it always stays weirdly hard even if mush outside, whereas it behaves normally at my parents (with harder water). Salt also plays a role, but in this case I normalized the salt content to 1%.
