I love your vids but there is one thing wich is not on point in this video. I just sat down on a chair watching this vid and i always finetune the volume depending on a video. So i finetuned that on your voice....:) guess what happened to me:D Because of the editing that is way to loud my chair was almost at the ceiling🤣please don't do that again and try to get the volume of the vid not to turbulent:) I mean the volume differences in the vid.

Vincenzo, every time i see an italian dish, I always try to check your channel for a correct version of it. Good thing is that you already have so many of it. Another good thing is, that I’m already able to recognize quite few things in the italian cuisine as good/wrong by myself, all thanks to you.

In the US Ragu is a cheapo pasta sauce brand and its basically candy with how much sugar and high fructose corn syrup is in there. Its very popular among people who never cook pasta sauce before.

Ragu began in 1937 as a homemade sauce made by Assunta and Giovanni Cantisano in their home basement, and sold from their front porch here in my hometown (Rochester, NY). Their business grew phenomenally, and they eventually sold it to a corporation in 1969. Then it became a mass produced, generic slop which was purchased by a public that didn't know any better.

Hey Vincenzo, here are some of the answers to your question. First, Ragu is a brand of pasta sauce sold in North America, mostly in the US. It is very cheap, very bland. It's even sold in dollar stores in Canada (where I live) Italian spices. That's a pre-made mix, again in North America of... Hang on, I think I have a pack of it somewhere... Got it. Seesh, expired 6 years ago... Anyway, mix of rosemary, basil, thyme, marjoram, oregano, sage and savory. Now to throw it out, ever only it this once. As for the Alfredo sauce, I couldn't tell for sure, but I'd hazard to guess that in North America, the use of milk/cream to make this sauce was made popular by the brand of pasta and dry sauce mix Knorr, which it's alfredo sauce requires milk.

The Ragu sauce is just a brand here in the US. It's tomato sauce with high levels of sodium and other "flavors" that are artificial. But people grow up with it here and believe it to be good. It's a bit sad, because when you make them fresh sauce, with real flavors, they compare in their minds with what they are used to...fake flavors. TikTok seems to be the place for baked pasta dishes 😂

Yeah here in the Netherlands we don't have that exact brand, but everyone here grows up and continues to use jarred pasta sauces filled with preservatives and shit, and everyone loves it, once I had a home made sauce from fresh ingredients, not even proper Italian admittedly, but already was so much better, there's no comparison, now I find these jars of premade pasta sauce disgusting, even a simple homemade sauce that takes minutes from good and fresh ingredients is so much better even if its not 100% the Italian way, still people continue to think the jars are easier and faster, when their not necessarily much easier or quicker, yes a proper Italian ragu takes hours, but you can whip up a fast pasta sauce that tastes a million times better then that jarred crap in pretty much the same time or only slightly longer, ugh people's laziness knows no bounds.

I thank you so much Vincenzo, for your channel. I discovered your channel during the pandemic and I am hooked (so is my husband 😂). For my daughter’s graduation gift my parents, and our family travelled to Northern Italy for a month. From Rome to Milan. We always loved real Italian food, because we live in Montreal that has an excellent, very proud Italian community. We all fell in love with Italy! Incredible country that has the best of everything - Incredible food, clothes, art and architecture!

I don't understand; it doesn't exist") GY is very much a real thing, a globally recognized variety of yogurt: anyone that knows a thing or two about cooking or nutrition knows exactly what “greek" yogurt is.

Hey Vincenzo, yesterday I just made traditional Bolognese from your recipe. Carrot, onion, celery, ground pork & beef, red wine. I even used tomato from Mutti and penne rigate from Rustichella d'Abruzzo, because you recommended in your videos. Unfortunately I only have the time to cook it in 2 hours. Next time, I'll definitely try to cook it at least 4 hours! It's the best food I've ever cooked in my life. I shared it with my neighbour, and they really enjoyed it as well! Thank you for sharing authentic recipes, techniques, and knowledge from Italy!

Thanks to you I now understand the importance of cooking the ingredients in the right order. I'm now repeating it in order to know it by heart. I also understand that we are often guilty of killing the pasta in Sweden. On the other hand, pasta and other Italian dishes were not introduced here until the late 1950's by the journalist Ria Wägner who had spent parts of her childhood in Italy. Listening to your way of describing Italian food also makes me understand where she got her slightly poetic way of writing recipies from. 😀 Just to finish this off, in an interview late in her life, she thought of most of the modern cookbooks, where numerous ingredients were needed to make a dish as "food porn". Keep the tradition flag flying!

I totally get what you're saying! Ragu in the U.S. is indeed a different thing compared to the authentic Italian ragu. It's all about simplicity and quality ingredients. This dish seems to have lost its way with too many unnecessary additions. 🤷‍♂️🇮🇹

Vincenzo. I once cooked an authentic Fettuccine Alfredo for my local club. 53 orders went out. Orders were made a few at a time due to how much would fit in my saute pan. They were made to order with just pasta, butter, and parm in the saute pan. It was a lot of work but well worth the comments I got from the customers. I could see why the American version with cream added was created. It would have been so much easier to have a batch of sauce made and simply toss the fettuccine in it, but I, like you, would have had a hard time calling it an authentic Alfredo.

Adding cream I understand because it helps keep the sauce, when sold premade, and it became a familiar taste, which unfortunately made it common in America and the UK. The other ingredients likely got added because "They're Italian!" like how People will add Soy Sauce to any Asian dish.

I totally agree!! Why when people are making food and they claim it’s a National dish from somewhere they don’t stay true to that culture? I find it so disrespectful. I truly love creating beautiful food from different countries around the world. That being said, I do my research. I shop at specialty shops, and look to find high quality correct ingredients. What ever food I’m cooking I want to respect the people, and the culture.

Se io mi mettessi a commentare ogni particolare che una tipa del genere fa, così come in altri video, darei semplicemente un’importanza che non meritano assolutamente. Vincenzo, this is what happens when no one teaches you how to cook. If you don't know any better, you may think this is good. We used to eat a dish in college we called, appropriately, Train Wreck. It was ground beef, random frozen vegetables, a jar of tomato sauce (maybe Ragu brand), macaroni, and shredded mozzarella, all mixed up in the same pot. We thought it was great. This woman definitely needs to watch your channel to learn what good really is.

In America Alfredo is cream or half and half and parmesan cheese. Toss pasta in oil add and reduce the cream, then add the cheese., salt and pepper.

I'm not defending this mess, I'm just saying one of the greatest things in the world is that "burned" mozzarella! The really brown corner pieces of any cheese covered casserole is amazing! I use buffalo mozzarella on my pizza some times and I know you don't want to brown it, but the low-moisture stuff is so good when it's browned! Don't knock it till you try it!

"Italian Seasoning" is to Italian food as "Curry Powder" is to Indian food. You take a bunch of dried herbs, most of which, are legitimately used in Italian cooking (albeit in fresh form more often than not), and you put all of them together. So for instance, there's dried basil, sage, thyme, tarragon, parsley, etc... Things you might use in authentic Italian food, but not likely all of them at once in any given dish. Much like "curry powder" -- full of stuff you will find in Indian food... But no one individual dish has all of them at once.

We bake spaghetti bolognese when we have leftovers the next day. We mix in parmesan cheese and lightly put mozzarella on top. Its a great way to make you feel you arent eating the same dish a couple days in a row.

It's an American creation lol. It's not Authentic Italian cuisine and I think most people watching this know that. If she called it Authentic Italian Spaghetti, I would understand how it could be perceived as disrespectful to Italian culture. American's do a lot of weird stuff like this trying to add their twist to what they perceive to be Italian American cuisine. Truthfully, many of them have probably never even experienced Authentic Italian cuisine and the taste of the traditional dishes are nothing like the American ones.I am American and would never eat this but many Americans do cook like this. Even if she's calling it Spaghetti, there were way too many unnecessary ingrediants used to cook this monstrosity. Chicken bullion, cream cheese, creole seasoning, season salt, cheap tomato sauce, garlic out the jar, none of these things were necessary and are actually bad for your health. I would simply call this dish high blood pressure and heart disease in a baking dish because it is highly processed and made with cheap ingredients. Not my cup of tea but I don't think people doing this really believe they are making Authentic Italian dishes.

You make some valid points! It's important to distinguish between Americanized versions of Italian dishes and authentic Italian cuisine.
