I think some of them just don't know better, others are simply way too lazy to do their own research. My biggest problem with this is - they are calling their changed recipes "authentic" and therefore deceiving a lot of people all over the world. Imagine cooking the simplest of dishes wrong your whole life because you trusted some of celebrity chef. That here is sad, so sad and probably not as tasty as the real deal.

there is no such thing as a wrong recipe. people take the original and adapt it based on what they like. and thats what cooking is all about. not strictly following recipes, but using them more as a starting point.

Some 30 years ago we had a little house in Italy not far from Gaeta where they grow the world's finest olives. I learned how to make ragu bolognese from a friend who was a locally famous chef. It did contain butter and stock but no garlic, milk or tomatoes. Very much like the recipe in my old traditional Italian cook book and exactly like Gennaro Contaldo's recipe you can find here: kzbin.info/www/bejne/gYSso3Wqa6xor7M (to be fair the cook book says that adding tomatoes is optional but not a lot. Like 300g for twice the amount of meat)

I love Nat. He is getting novice cooks at home to make the recipe with what they would normally have available in the pantry/fridge while sticking as closely as possible to the traditional recipe. Loved your review :)

I don't understand how these Michelin star chefs are so bad. Ramsay uses olive oil for everything, sometimes the taste is too strong or the smoke point is too low and canola oil would be better for searing a steak for example. Jamie Oliver's "Swedish meatballs" are a joke as well, nothing like what they should be. Smdh...

@@tomaribicic7401 Thats exactly why hes a top chef. He doesnt make traditional food, cause Michelin starred food is far from traditional. He always has to put a twist on everything.

@@tomaribicic7401 Gordon Ramsay is absolutely a fantastic world-class chef. Italian cuisine just seems to be his Achilles' heel -- he seems to have zero appreciation for Italian traditions. I honestly think it's because his background is in classical French cuisine, and you know how the French and Italians feel about each other :)

Vincenzo I have now made your bolognese at least 15 times in different dishes and everyone that has tasted it is in love with it! I truly thank you for your recipes and so does my wife and our 5 children! My two oldest daughters are slowly lol learning how to make your dishes.Because of you we always have a family dinner once a week and my two oldest daughter 21 and 25 look forward to it every week. You have created something very special here!

It's anchovy sauce. You're both looking like guys who should give up cooking and just go to McDonalds. W-sauce is literally anchovy which fits in any tomato based product. If you know about food science, and cooking like a real chef, you'd know the value of W-sauce. I never thought it belonged until I learned how to cook like a chef and not a closed minded fool. Most of the aversion comes from the product bein made in the UK. You guys are ignorant to the importance of anchovy and umami in Italian food.

I followed David’s instructions step by step. The result is awsome every time. I thought I was pretty spot on before but Davids way is another level. Most people don’t know how simple Italian cooking is.

@Masaya Ishii there’s a rumor that the recipe was influenced by a general during world war 2, in japan this general ate a dish called spaghetti naporitan (tomato ketchup based sauce with sausage) and when the general moved in the Philippines during american colonization, his staff altered the recipe and used banana ketchup instead, since there was a shortage of tomatoes/tomato-based products during that time and the rest is history. i’m from the philippines, but i prepare chitarra alla teramana at our place 🙂

Gonna try making my bolognese sauce, but cut the herbs,garlic out this time. I do use just water and a little tomato paste and make my own sauce from whole crushed san marzano tomatoes and cook it for 6 to 8 hours

I am waiting that Gordon R puts green peas in the bolognese sauce.... To be honest spaghetti bolognese is very common in Switzerland. Only tomato sauce would not be enough. Congratulations on 415000 subscribers, Suzanne and Vincenzo! Thank you for sharing your wonderful video with us.

My favorite macaroni to eat with bolognaise sauce is medium shells. It holds the meat really well.

Good thing I found you guys. I made a bolognese yesterday but didnt have much flavour and didn't enjoy very much. Guess who I searched for to try and make a proper "bolognaise" for next time? Mr Ramsay 😅 but luckily I noticed your video reacting to Ramsay and the thumbnail didn’t look promising 😅 so I've now seen this and Davids video on how to make a real Italian bolognese sauce and which pasta to use and excited to try it Davids way next time 😊

I grew up hating bolognese because my mum also used Worcester sauce in her recipe. It was vile 🤢, seeing Gordon add it I got flashbacks 😂.

@@vincenzosplate Oh don't worry Vincenzo I have. I tried the real thing years ago and finally saw the light, it's now one of my favourite meals and my husband loves it when I cook it for him. My mum God rest her just wasn't well versed in Italian cuisine.

I think worcester sauce is just a love it or hate it thing. It's not authentic to Italy but a lot of people use it in any tomato sauce

Hilarious again. I love these videos. Inspires me to do better. I will say though. If I'm making making my own recipe sauce for a pasta I use Worcestershiresauce. And it's delicious. But I would never call it after any Italian recipe or Italian at all for that matter. Just my special sauce to go with pasta.

Your reaction is similar with my reaction when people in west java cook mendhoan (which is my hometown dish in central java), they cook them until crunchy. However the authentic one is must be halfcooked🤣🤣

One of the funniest videos on KZbin. Two Italian chefs looking at Gordon Ramsay making Bolognese sauce and just laughing at all the stuff he's doing wrong. 😂Very amusing. The thing is Vincenzo is correct because I tried a bolognese one day with herbs and garlic, then the next night I had leftover meat to make 1 more meal so I had it cooking all day again without herbs or garlic and it was better. I got a second opinion and they also said it was better. I still added chicken stock though and next time I am going to leave that out too.

Oh and to share: I went to an Italian restaurant here in my country. It is an authentic one because the owner is Italian himself. I tried one of their pizzas and it tastes different from the usual pizzas that I have tried. One thing I notice is that Italian pizzas don't put too much cheese. It is all about the balance of cheese and tomato sauce, and the tomato sauce tastes fresh and amazing. :)

I love your garlic comments. I have been telling my friends for years that they overdo garlic not all Italian food is loaded with garlic. Garlic is not such a primary ingredient in Italian food.

I saw italian chefs useing bay leaf. Is that the modern version? Some people say to put milk at the beginning cus it tenderize the meat. I havent tried it though to see if it really works.

I believe that in the world the Bolognese sauce is eaten with spaghetti, but I suggest you try it with tagliatelle or pappardelle, much better! 😋

The tomatoes paste in the stock is a common way to help distribute the paste more evenly in the dish

I do everything authentic always when I make my bolognese. No stock, Milk at the end, no herbs. let is cook for at least 4 hours. But I need that garlic, I’m sorry 😅

"Spaghetti" Bolognese is time honoured Aussie dish. coz when Italians came out here in the 50's that was the only pasta they could buy at the shops. So it is now an Aussie ICON...MATE!!

I know, but in theory it is wrong to use spaghetti if you want to eat an excellent Bolognese, as spaghetti does not allow the sauce to adhere well on the pasta!

I’m an Italian living abroad and all my non Italian friends love spaghetti so I am forced to it… my trick is to use some high quality spaghetti pretty rough, not smooth, like bronze-cut spaghetti they will take the sauce nicely and they are usually a big bigger..

Its weird how Gordon takes all The shortcuts. He uses crushed tomatoes and no pasata, doesnt Cook it long enough. I know what i would taste like. Bitter. The sweetness of the dish wont Come out if you wont give it time. Sure you could add garlic but at your own risk, too much garlic also turns bitter, when using Selleri in bolognese you dont need garlic at all really.

Hey Vincenzo: would Italians ever use anchovies to bump up the saltiness of Bolognese? If so, then that's why Ramsay used Worcestershire sauce. It's a traditional way to bump up umami flavor and saltiness. Anchovy fillets, fish sauce, Worcestershire, Ancient Roman Garum: all do the same thing in the same way.
