Did you know that Spaghetti Meatballs is a dish that comes from the Abruzzo region? Exactly from the town of Teramo, and it is made with mini meatballs, but we all know that when an Italian dish (not only) arrives in America, they completely change it, and always for the worse!
I know that spaghetti meatballs are loved by many, but I really suggest you try my Nonna's recipe, the one with mini meatballs, because only in that way can you enjoy a real forkful of pasta in which there are all the ingredients of the dish , which the version with the giant meatballs cannot give you!

I grew up eating Spaghetti with a ragu. Often the protein was rabbit, somtimes squirrel.

My friend is a full blooded Italian and he loves spaghetti with large meatballs. He is aware that dish is only 50% Italian but he approves it.

Vincenzo, you can always use your fork to cut up the meatball a little and then swirl the pasta and stab a bit of the meat for each bite. The dish is essentially veg (sauce) protein (ball) and carb (noodle). It's relatively easy and versatile/adaptable. I make a German version with a mushroom sauce (beer, not wine) balls have allspice, marjoram and rye bread crumbs served with egg noodles.

My whole life. My Mother's sauce had pork loin, meatballs (Beef, Pork & Veal), Italian Sausage (not broken up, but left in the casing), a peeled potato (don't ask me, my grandmothers both did it) and something until recently I only ever saw my family do, a few peeled boiled eggs. Both of my grandmother's were of Sicilian descent. It's just the way they did it. I make it the same way and I love it.

I agree about the size of the meatballs. Small ones don’t require you to cut them. Small ones you can have a meatball with every bite of spaghetti.

i beleive the "American" size meat ball is based on the polpettone, where the meat ball is the meal and not the pasta

That tip about spaghetti cooking time was perfect: the longer the time, the better the spaghetti. Also, you should recreate the muffin one using your style with smaller meatballs.

Interesting, I thought the cook time required was based on the specific grain used, the specific diameter of the pasta and how dry it was when sold. Who knew it was simply the quality of the pasta?!

@@james0000 it's not simply the quality of the pasta. Poor quality spaghettoni can still take longer to cook than good quality spaghettini. Of course the diameter etc. matter.

@@james0000 thickness and size definitely still matter a lot, its just that if size and thickness remained equal, the one made with better grain, better manufacturing and drying process would take longer to cook

I always cut the spaghetti in half but after watching your videos and learning the Italian way to do it, if i try to cut them i can hear you in the back of my head saying “you killed the spaghetti”

I really enjoyed this video! I've always made my meatballs about 13-15mm size and my kids have loved it because they get more in each bite. I like the taste of a big meatball, but I only eat them on a sandwich. I need to find the video of your Nonna's meatballs and try them now!

By the way, Classico is a brand of pre-made spaghetti sauce... It's basically the cheapest there is except for the no-name stuff.

I'll say that Instant Pots are great for stew. (Much faster, and it tenderizes the meat perfectly.) I doubt you'd save any time making spaghetti in that manner.

Italian American friend your way might not be our way. Personally putting carrots and celery in tomato sauce or in meatballs is horrible. See, so dont judge, because Italian Americans happen to be some of the best cooks in the world. Visit New York sometime maybe it will enlighten you God bless.

First video was brilliant and the third was endearingly creative, but I had to skip the second one...no frozen meatballs for me. That and she used a cheap sauce (typically I go with Rao's but there are other high end brands in a jar as well).

@@vincenzosplate I wasn't trying to come across the wrong way (I certainly hope I didn't)...I'll confess I actually USED TO eat frozen meatballs, but after making homemade ones I just can't go back to frozen. Nothing technically wrong if someone DOES enjoy them, though.

I don't think it's gamy at all, tastes similar to the fat that you would get on some steaks but much softer and creamier.

Never use bone-marrow, unless you are using lean meat for your meat-balls. Bone-marrow is too fatty and greasy/slimy tasting.
