i just have to say that here in new york locatelli pecorino romano is by far the most widely used pecorino cheese. locatelli is an italian brand imported from italy, and the quality of it shows in the cost. is it a bit salty? sure, but it is still a good quality cheese. don’t really understand the negative comments.

Just an FYI, the egg shell color is determined by the breed of chicken. My Black Austrolorp girls lay pink/tan shelled eggs and my Welsummer sweet girls lay dark brown shelled eggs.

Locatelli is an Italian brand. Locatelli Romano is sheep milk pecorino. It's the cheese I grew up eating in Brooklyn, it's really good.

Oh my how can an Italian not know about Locatelli, Pecorino Romano Cheese! I'm way older than you guys, I could be your mother. So I have been around a long time, my parents used the brand Locatelli all of their life living in America. And so do I!. It might have been made better back in the day. But it's still a good piece of grated cheese for many Italian recipes. And very expensive to buy in the Supermarket these days. So yes, Locatelli has been around for years, here in America. Which it was imported from Italy back in the day. I'm not too sure if it now made here in America. Like everything here in the good U.S.A. things can change.

(Ava and Harper) I recently stumbled upon their channel and watched a video thinking it was an American travels to Italy to learn about culture and cuisine and Ava is a local Italian chef he is interviewing…. White eggs come from white chickens. Brown eggs from brown chickens. As for the yolk color, I’ve noticed that regular cheap eggs are pale yellow but the higher quality eggs are more yellow. I have a farmer who brings me fresh eggs sometimes and the yolks are almost orange.

Ha! I watched their Northern v Southern styles of Lasagna video a couple of months ago and I thought at the time it would be good to see you review one of their videos. This was great. Harper did a great job with what he had. I agree with you Vincenzo that he should have kept his mouth shut about the sausage until after Eva tasted the ragu to see if she picked up on it.
