Cesare Casella (born March 1, 1960) is an acclaimed New York chef and restaurateur known for the ever-present rosemary sprouting from his shirt pocket. His Tuscan roots have guided him through a career that celebrates simplicity and the quality of ingredients. He was behind celebrated New York restaurants such as Beppe and Maremma in the 2000s. These days, Chef Casella acts as Chief of the Department of Nourishment Arts at the Center for Discovery nestled in the Catskills and as Dean of Italian Studies at the International Culinary Center. Guys these guests you've had on recently have been immensely entertaining and insightful, because they all bring their own ethos, philosophy, and experiences with them. Of course you can't have such high-profile guests like Jacques or Cesare on every week, but I think you're doing a fantastic job with the interviews, so looking forward to future guests!

When you can barely understand an Italian chef, you know his food is legit. Same when there's just one chef in the back of a Chinese restaurant, who's moving the wok spoon with one hand, smoking a cigarette with the other, while cursing under his breath the whole time. 😂

Any time you get masters in a particular field from around the world, sitting and talking, roasting and shit-talking is inevitable. That interaction, with the underlying respect for each other's skill, is pure gold. Those guys will talk smack, but then sit and figure out the best dishes/creations to prove their point, and everyone will end up better for it as they all learn from each other and improve. Stuff like this is how innovation comes about, and deep, mutual respect is born.

I love this guy I need more of this from all over the world. This was beautiful and I know that probably sounds stupid to some other people, but it was gorgeous to listen to this man speak about his experience. I love it.

Yo for real men like this get overshadowed very quickly by some new upstart (which not to say is a bad thing by anymeans) however men like this setup the foundation for what we know about certain Cuisines to this day such a great episode keep it up guys!

This was a delightful episode. Chef Cesare is amazing, and the center he directs sounds like such a wonderful endeavor. Really enjoyed this one... BTW Riffing on your poster- had a similar one: Visualize whirled peas. Stop the violins.... regards from a foodie in Eaton's Neck, NY!

Traveling through Ireland with my father (where he lived), we went to a small town on the Antrim coast, tried to get a lobster. One of the servers called her uncle (a fishmonger) and he said all the best were being sent to France and he didn't have any that day to spare. Ahh, good times! Had the best fish chowder I'd ever had in a littlest pub in Northern Ireland, Mary McBride's. Isn't it great when local ingredients get used? There is nothing better than simplicity! By meaning the littlest pub is it literally had one booth, there was a garden area but that booth was it. I heard at the time that one of the Gallagher brothers (from Oasis) was trying to buy it.

I work overnights, so I will watch this tonight. But I just wanted to catch the comments while it just dropped. Said this last episode, "they made SYWGF, but saw themselves and said 'oh fuck, we gotta get skinny'" 😂

So let me get this straight. He’s in charge of DNA so chef are in charge of blood evidence like Doxy rho nucleic acid I mean it makes sense because they work with animals I just thought maybe we would have forensic scientist doing it that’s very confusing to me, but you know, whatever it brings a big full the chef show vibe maybe Hannibal Lecter could be the first guest and if you’re gonna talk crap it was a joke. It’s clearly a joke, so go ahead and troll from your mom’s basement. Do you guys are awesome
